Sink your teeth into the most decadent dessert of the season! Keto Pumpkin Fudge is rich, chewy, and surprisingly low-carb.
Is Fudge Keto
No, most traditional fudge is not ket0-friendly. It’s made with rich, high-sugar chocolate. In order to enjoy fudge on the keto diet, you need to change the ingredients. Thankfully, that’s really easy!
This easy recipe has just seven ingredients. One of them is real pumpkin puree! Oh, quick note about that. Use pumpkin puree, not pumpkin pie filling.
They look alike but the pumpkin pie filling includes sugar or high fructose corn syrup. We need the puree, not the sugar!
Keto Fudge
I didn’t need to use any keto sweeteners in this recipe! That’s because I used both keto which chocolate chips and keto milk chocolate chips.
Both of those things are sweetened with low-carb sugar substitutes. They add the perfect balance of sweetness to the fudge.
This fudge reminds me of pumpkin pie. That might be because I used pumpkin puree and pumpkin pie spice! If you want to make your own pumpkin pie spice, go ahead. You can use more cinnamon or less nutmeg – whatever you want to make it taste how you want.
Pumpkin Fudge
I love giving pumpkin fudge away as a DIY gift. Since it doesn’t need to be refrigerated, you can give it as a thank you gift to teachers or share it at a holiday dinner.
If you’re going to give it as a gift and you don’t know if they have a nut allergy, just leave the walnuts off the fudge. It adds some fun texture and crunch, but it isn’t necessary.
You can also choose to leave the chocolate chips off the top and instead top it with some confectioner’s sugar substitute or your favorite color of sprinkles. And another fun tip is to cut the fudge into cute shapes with a cookie cutter!
There really is so much you can do with this simple recipe.
Pumpkin Desserts
Keto fudge fits in with all of my favorite low-carb pumpkin desserts. I like to serve it at parties with some Keto Pumpkin Coffee Cake Cookies, and Keto Pumpkin Spice Scones.
And if I really want to show off, I can make both Keto Mini Pumpkin Crescent Roll and tasty Keto Pumpkin Crisp.
How To Store Fudge
The best way to store homemade fudge is to keep it at room temperature in an airtight container. Keep the air off of it and it will last as long as possible. It’s safe to eat the fudge for about a week after you make it.
Please remember, do not put your pumpkin fudge in the refrigerator. It won’t make it last longer and it could alter the texture of the fudge. But – even worse – it could also absorb the odors that are in the fridge, which will make the pumpkin fudge taste worse.
You can freeze it if you want to! Place the fudge in airtight freezer bags and remove as much air as you can. If you double bag the fudge or put the bagged fudge in a freezer-safe container, you’ll protect it from becoming freezer burned. The fudge will stay fresh in the freezer for up to six months.
