My stuffed sweet peppers are something I should make more often, but I don’t. Because I want them to maintain their surprise. You see, they taste like something you’d order at a restaurant. The richness of the cream cheese with the heat of the green chiles. It’s beyond incredible.

Yes, they are totally fine if you are on keto. Most rotisserie chickens are made with spices and cooked in the store. Avoid anything with a BBQ or sweet rub, as these will likely have added sugars.
Which Peppers are Sweet Peppers?
The sweet peppers are also called bell peppers. You might find them in a bundle of colors together – green, yellow, and orange. You can use any of them, they are all mild enough to eat raw.
What to Serve with Stuffed Sweet Peppers
These are almost like an entire meal in one dish, so you won’t need to serve much with them. But here are a few ideas that make enhance the meal:

Ingredients:
Yields 18-24
1 pound sweet peppers
1 cup rotisserie chicken, shredded
8 ounces cream cheese, softened
4 ounce can green chiles
2 tablespoons olive oil
Instructions:
Preheat oven to 400 degrees F.
Prepare a baking sheet with foil.
Cut tops off of peppers and de-seed.
In a mixing bowl, beat cream cheese until fluffy.
Beat in entire can of green chiles, undrained.
Gently fold in chicken.
Stuff peppers with chicken mixture.
Coat peppers in olive oil and place on baking sheet.
Bake for 35-38 minutes.
**Please note that some filling may come out of the peppers during the baking process. Using a spoon, the filling can be pushed back into the peppers gently prior to serving.
