~ Oven Baked Chicken Nuggets ~
When I had Joseph, it had been 10 years since we had a baby in the house and we all adjusted to it without many bumps along the way. Now that Joseph is a full blown toddler, he makes his presence very known with loud happy squeals, lots of hugs, and many many demands to fit the picky phase he’s going through. Our biggest battle right now is his dietary habits. If it were up to Joseph, he’d live on apple juice and popcorn. There’s nothing wrong with either of his favorite things, but as a mom I want to teach him healthy eating habits, which is why I make him oven baked chicken nuggets instead of buying him fast food
While I keep introducing new items into his diet I’ve discovered Go & Grow by Similac® Food Mix-Ins this product is available at Walmart or online at Walmart.com. These aren’t a replacement for healthy foods, it just allows me to gradually develop his diet into one that is a little more balanced. It really is the best of both worlds because he gets the nutrition he needs while eating his favorite foods.
Each single-serving packet (8.7 g) allows me to add that extra nutrition that he needs to my oven baked chicken nuggets that he absolutely loves. I don’t have a lot of time to make fancy meals for my family, but I have found ways to make some of their favorite fast foods into healthier homemade versions in a very short amount of time and the Go & Grow by Similac® Food Mix-Ins (this product is available at Walmart or Walmart.com) makes my job even easier. With protein, fiber, and essential vitamins and minerals, it’s my secret weapon for the added nutrition my growing toddler needs and it’s homemade. That’s always a good idea!
Below is my super easy-to-make oven-baked chicken nuggets that all of my kids love, with a little nutrition the mix.
What you’ll need:
1 pound of chicken breast cut into little bite size pieces. One pound of raw chicken yields 12 ounces of cooked chicken. A toddler’s serving size is generally 2 ounces of cooked chicken. This recipe makes 6 – 2 ounce servings.
Use 6 packets of Go & Grow Mix-Ins for pound of chicken breast.
Use one Go & Grow Mix-In packet for one serving food (generally ½ cup of food) that’s available at Walmart or Walmart.com
1 cup of crumbled saltine crackers
6 packets of Go & Grow Mix-Ins
salt and pepper.
3 large eggs.
Cooking spray.
Directions:
Preheat oven to 400 degrees.
Crumble saltine crackers and then add 6 packets of Go & Grow by Similac® Food Mix-Ins™.
Season chicken with salt and pepper.
Take one piece of chicken at a time, dip them into eggs (make sure you beat them first), and then into the crackers.
Spray baking sheet with cooking spray.
Place the chicken bites onto baking sheet and bake for 20 minutes until cooked through. **flip them half way through.
Serve with honey mustard, ketchup or some blue cheese dressing.

These nuggets look really good! I know my daughter would have loved these when she was young. Heck, I think she would still love them. I have never heard of this product before – I think it is a great way to add essentials to a little one’s diet.

Oven baked is the way to go. These look delicious…and I would have never thought of using Similac Food Mix Ins.
