Typically, a meatless meal involves some kind of grains or carbs – pasta, potatoes, and the like. I actually kind of enjoyed the challenge of creating a low-carb meatless meal. It got me to think critically about how I was going to create a filling meal without meat.
Most of my meals use meat as the main dish and veggies on the side. So, how do you create a meatless keto dinner?
The best way to make a low-carb meatless dinner is to use keto-friendly ingredient replacements, like a low-carb noodle or mashed potato substitute.
For this dinner, I used Palmini noodles in my stir fry. They taste just like pasta made with wheat flour, but they have almost no carbs. Keep reading and learn more about how I made a stir fry that my family keeps asking for more of.
Best Ramen Stir Fry
Stir fry recipes are some of my favorite ones to make. When all you do is create a sauce, and then fry everything in a pan, it is one of the easiest recipes ever.
Ramen stir fry is a great way to get started on the keto diet because it looks and tastes just like other recipes you have made before. You won’t crave or miss carb-heavy foods because this tastes just like it. Plus, it doesn’t require much food prep either. You can usually find most of these ingredients already chopped in the produce section of your grocery store.
How To Make Keto Stir Fry Sauce
What sets this recipe apart from others is the delicious stir fry sauce. You can use this sauce to make cauliflower rice stir fry or use it as a marinade for chicken.
I used soy sauce and sesame oil for the umami flavor. The ginger paste and garlic add the spice. Then, I sweetened it all up with some Swerve brown sugar substitute.
You could use a liquid sugar substitute too. Don’t use a confectioner’s sugar substitute or a granular sweetener because they will change the texture of the sauce.

How To Use Palmini Noodles
Palmini noodles are the perfect keto-friendly substitute for typical noodles. Use them the same way you would use other types of pasta. Toss them in a sauce, or use them in a stir-fry. I’ve used them before in other recipes such as keto tomato cream sauce pasta and chicken piccata.
For this recipe, use your favorite types of meat or vegetables. Making a stir fry is a fantastic way to use up leftovers in your refrigerator.
Where To Find Palmini Noodles
The good news is that palmini noodles are really easy to find! You’ll find these noodles sold in a can at Walmart or on Amazon. Since they are a canned noodle, you don’t have to boil them or cook them – which speeds up the cooking process.

Ingredients:
Heat the olive oil in a skillet over medium heat on the stove.
Add the bell pepper, carrots and mushrooms to the heated skillet, and saute until becoming tender.
Stir in the napa cabbage, place the lid on the skillet, and saute until the cabbage softened.
Place the palmini noodles into the skillet, stir to combine and saute another 3-5 minutes.
Mix together the ingredients for the sauce in a bowl, and stir to combine well.
Pour the sauce over the mixture in the skillet, and stir to combine.
Saute another minute, and then garnish with green onion and red pepper flakes before serving.

- 1 tbsp Olive Oil
- 1/4 cup` Green Onions for garnish
- 2 Eggs
Keto Stir Fry Sauce
- 3 tbsp Soy Sauce
- 1 tbsp Swerve Brown Sugar Substitute
- 1 tsp Sesame Oil
- 1/2 tsp Ginger Paste
- 1 tsp Garlic minced
