Sorullitos De Maiz

I actually didn’t start drinking coffee until I had kids. It was by choice because I was always surrounded by the adults drinking coffee; Café Bustelo® to be exact. A visit to my grandma’s or any other relatives house wasn’t complete without a cup of café con leche. They always had of cans sitting on their counter and on the stove a boiling pot of a water, along with a colador de cafe (coffee strainer). Back in the day, they boiled the water, stirred in the grounds, and then strained the coffee through the colador into a pot or a cup and it tasted perfect!

Fast forward to what feels like another lifetime, I too now start (and when I have a ton of work I sometimes end) my days with Café Bustelo’s bold flavor (it has a rich full-bodied flavor that stands up to milk and sugar which I love), only now it’s way easier to make and enjoy using the  Cafe© Bustelo® K-Cup® Pods. Target has a large variety available – ground, whole bean, brick, K-Cup® Pods and even Instant (a great on the go option).

On most days I don’t have much time to do anything but drink my Cafe Con Leche. On those scarce, glorious days where I don’t have anything to do, I like to make another childhood favorite of mine: Sorullitos De Maiz! I don’t recall who made them the first time I tasted it, but I do know that I love them now as much as I did then, and they go perfect with a Café Bustelo. Often times these sweet Sorullitos De Maiz  (Puerto Ricans like me call them serullo but they also go by arepa de maiz) are made with cheese and I even recall a relative even using cream of corn, but I keep it simple and use only the araina de maiz (corn meal). Check out the sorullo de maiz recipe below.

Sorullitos De Maiz 

Ingredients:

Cornmeal

Sugar

Salt

Oil

Instructions:

Bring two cups of water to a boil and set aside.

Stir cornmeal, salt and sugar into the water and return to heat and stir until mixture does not stick to the sides of the pot.

Remove from heat, let cool and roll.

Sorullitos De Maiz

Fry until golden brown and serve with cafe con leche! Serve the Sorullos De Maiz for breakfast with syrup as dipping sauce, for dinner with some ketchup, as an appetizer or on their own like I do with cafe con leche.
