It’s about 90 something degrees just about every single day and the A/C barely cools us down. It’s been like that every day since summer kicked in and it’s days like these that call for a recipe like this watermelon, mint and feta salad from Freshfromflorida.com. It’s not only easy to make, but it is also refreshing, healthy, and perfect to serve for lunch or dinner. To be honest, it also looks very pretty! We’ve been known to devour an entire watermelon in one day, and now that I added the Florida Watermelon Slices with Balsamic Syrup, Mint Oil & Feta Cheese  to my list of favorites, we’re going to have to start buying more than one watermelon at a time!

Florida Watermelon Slices with Balsamic Syrup, Mint Oil & Feta Cheese

This recipe is one of the many that Fresh From florida features on its site. These recipes use the many fresh fruits, vegetables, and even seafood, grown right here in Florida. There’s also seasonal foods to pick from! It’s a Floridian perk that I’ve never taken for granted, especially during the summer. Right now we’ve been enjoying sweet corn, tomatoes with avocado, and tons of watermelon for desert and, more recently, salad, as seen below. This watermelon mint salad takes less than 20 minutes to make and uses fresh watermelon slices, fresh parsley and mint, balsamic vinegar, a touch of Florida grown sugar and topped with feta; it’s the perfect summer side dish! While it’s delicious enough to eat on its own, you can also pair it with grilled steaks or just about any seafood!

    I would have never thought to put balsamic vinegar and feta cheese on watermelon, but this looks surprisingly good. I love salt on watermelon so I bet this is amazing.

    To me, nothing is more refreshing than watermelon in the summer. I’m not a Florida girl but my grandparents used to send us Florida produce all year long. Boy, was it wanted.

    I love watermelon and feta together, the salt really brings out the sweetness! I’ve never tried it with all the other ingredients but I’m sure it’s delicious 🙂
