Then these low-carb tacos are for you! This is an easy slow cooker meal that you can throw together before you leave for work – and it’s ready when you get home!
It’s also budget-friendly, too. Meat is one of the most expensive parts of a meal.
So when you use beef chuck, you’ll save so much (without sacrificing flavor!). And if you’re the only person in your family eating low-carb, I’ll share how to make this recipe for everyone else without wasting a bunch of time or making an entirely different meal.
Beef Chuck Tacos
Before we get into other parts of the recipe, let’s answer something important. What exactly is beef chuck?

It’s a large cut of beef that contains parts of the shoulder bones and connective tissue. Since it has these other parts, it’s pretty tough (and costs a lot less per pound than other roasts or steaks).
This is why I prefer to cook beef chuck in the slow cooker. As it cooks all day over low heat, the tissue and meat tenderizes and it will become super easy to shred with a fork.

There are so many different ways to prepare and serve the slow cooker beef chuck tacos. To make them low carb, serve them inside low-carb tortillas.

But you can also use large pieces of lettuce as wraps too. I have a bunch of keto-friendly Mexican recipes that will taste delicious with your tacos.

Start out with some taco soup and you have a Mexican feast for the entire family. And for anyone who isn’t eating low-carb, serve the tacos with rice and beans. They will love it!
Low-Carb Slow Cooker Beef
Slow cooker beef chuck tacos are the perfect thing to make for your weekly meal prep! Store leftover beef in an airtight container and keep it in the refrigerator for up to three days.

Then, reheat it in a skillet or in the microwave.
You can freeze it too. Store it in the freezer for up to six months.
Keto Taco Toppings
Another one of my favorite things about this recipe is that you can customize it to taste just how you want. If you’re eat keto and tracking your carbs.

Then I suggest topping them with some lettuce, onion, and avocado or guac. Use tomatoes sparingly since they’re higher in carbs and use as much cheese as you want.
What about taco sauce or salsa? When you follow this recipe, you won’t need it! The beef chuck comes out amazingly juicy and bursting with tons of flavor.

Yield: 12 tacos
Ingredients
- Beef chuck roast
- Onion, chopped
- Garlic, minced
- Ground cumin
- Chili powder
- Paprika
- Oregano
- Beef broth
- Lime juice
- Salt and pepper, to taste
- Small tortillas (low-carb)
- Optional toppings: shredded lettuce, chopped cilantro, diced tomatoes, salsa, cheese, sour cream
Instructions
Start out by seasoning the beef chuck roast with cumin, chili powder, paprika, oregano, salt, and pepper. If you want it to taste spicier, add red pepper flakes.

Add the seasoned beef chuck to your slow cooker. On top of the beef, add your chopped onion, minced garlic, and beef broth.

Cook everything together on low for 4 hours or until the beef is tender and shreds easily.
When you’re ready to serve it, shred the beef chuck roast with two forks. Then, mix it together with the juices from the slow cooker.
Heat up your tortillas in a pan on the stove or in the microwave. Fill them with your shredded beef and add your favorite toppings.
