If you’re a fan of Chinese takeout, then this recipe is for you. It’s a fantastically low-carb recipe that will fill you up. It’s also a super tasty way to get your family to eat more veggies.
Even though cauliflower rice has a different texture than rice, this recipe has such a tasty flavor that your family won’t even care that it’s not rice. This might just become your new favorite way to eat cauliflower!

Fried Rice With Bacon
This is the most important tip of all. Before you make cauliflower fried rice, make sure you remove as much moisture content from the cauliflower rice as you can. Don’t just use a strainer.
Place the cauliflower rice in a cheesecloth and squeeze it until you don’t see any more liquid coming out.
If you leave water in the cauliflower rice, it won’t fry up as well and will change the consistency of the entire recipe.
When you are on the keto diet, always read the labels of bacon before you buy it. Make sure the bacon doesn’t have any maple syrup or other forms of sugar in it.
Egg Fried Rice
When you add scrambled eggs to the cauliflower fried rice, you will be making it just like Chinese restaurants do. I love the flavor and texture of rice when it’s fried with eggs.
If you want to make this a complete meal, add shrimp or chicken. I have a recipe for cauliflower fried rice with chicken. Using canned or rotisserie chicken is one of my favorite time-saving keto cooking hacks. It’s naturally low-carb and doesn’t have added sugar.
Veggie Fried Rice
Even though this fried rice has peas and carrots in it, it’s still low-carb. There are only 4 grams net carbs in each serving. If you want to keep the carb count low, be careful with how many peas and carrots you add. I only used 1/3 a cup in the entire recipe.
I also only used 1/2 a cup of bacon – not the entire package. Limiting your ingredients is the best way to control the amount of carbs in the recipe.

Low-Carb Veggie Egg Fried Rice With Bacon

Ingredients:
Frozen cauliflower rice
Onion
Frozen peas and carrots
Sesame oil
Soy sauce
Eggs
Bacon
Green onions
Black pepper
Instructions:
Place the sesame oil in a skillet over medium heat on the stove.
Saute the onions in the skillet until beginning to soften.
Stir in the frozen peas and carrots, and cook until defrosted.
Raise the heat to medium-high, and add in the well drained, cooked cauliflower rice. Saute until beginning to crisp up.
Spoon the cauliflower mixture off to one side of the skillet, and pour the eggs into the other side. Scramble until cooked through. Mix the eggs into the cauliflower mixture.
Pour the soy sauce into the skillet, and stir to combine well.
Add the bacon and black pepper to taste to the skillet.
Serve garnished with green onions.

- 5 cups Frozen Cauliflower Rice cooked and drained well
- 1/2 Onion chopped
- 1/3 cup Frozen Peas and Carrots
- 2 tsp Sesame Oil
- 3 tbsp Soy Sauce
- 2 Eggs beaten lightly
- 1/2 cup Crumbled Bacon
- 1/4 cup Green Onions chopped
Instructions

Place the sesame oil in a skillet over medium heat on the stove.
