Keto Corned Beef and Cabbage
Normally, the spices that come in a pack of corned beef is so potent that you don’t need to add anything else to it. Since I turned this into a skillet meal, I used cream cheese, heavy cream, and chicken broth.
Those additional ingredients muted the pungency of the corned beef spices. That is why I added a spoonful of horseradish sauce.
If you like milder, creamier flavors, you can cut back on how much horseradish you add. It’s a very spicy sauce, so add more if you like things hotter!
Corned Beef Skillet
Whenever I make skillet dinners, I always use my cast iron skillet. I love that I can place it in the oven and let it stay warm.
In addition to the cast iron skillet, you’ll also need a food processor or an immersion blender. It’s the best way to mix together the cream cheese, heavy whipping cream, and horseradish sauce. You can mix them together by hand, but it takes a lot longer!
Store leftovers in an airtight container and keep it in the refrigerator for up to three days.
What To Eat With Corned Beef
This is a complete meal in one skillet. You don’t need to add very many things to it. If you want, you can serve some keto biscuits on the side.
Garlic knots are another wonderful choice. For something fluffier to go with the herby beef and cabbage, make some mashed cauliflower.
For dessert, serve a really green keto mint chocolate chip ice cream.

Chopped cabbage
Matchstick carrots
Chicken broth
Minced garlic

Instructions:
Place the cabbage and chicken broth into a large skillet over medium heat on the stove.
Cover, and simmer until the cabbage is a crisp tender.
Mix in the matchstick carrots and garlic, and saute until the carrots begin to soften.
Add the cream cheese, heavy whipping cream and horseradish sauce to a food processor or blender, and blend until smooth.
Pour the sauce mixture into the skillet, and stir to combine.
Mix in the meat, and stir to combine well. Season with salt and pepper to taste, and saute until heated through.
