Filled with meat and veggies and smothered in a zesty mustard dressing, low-carb ham and cabbage salad is a complete meal that’s ready in 15 minutes!
Ham and Cabbage
This is the easiest, tastiest, and most filling lunch recipe you’ll make on the keto diet! It’s the perfect way to use up leftover keto glazed ham or deli ham. You can even use leftover roasted turkey or any kind of deli meat that you have in your refrigerator.
Honestly, I think ham gives it the perfect flavor. I love how ham has a slightly sweet taste and it complements the tanginess in the Dijon mustard dressing, And it requires basically no prep time since you’ll use pre-shredded coleslaw mix! All you have to do is mix all the ingredients in a bowl and then eat.
Creamy Cabbage Salad
When it comes to salad, there are two types of dressing – vinegar and oil ones and creamy ones. This ham and cabbage salad is covered in a tangy dressing that’s made with a combination of mayonnaise, sour cream, lemon juice, and Dijon mustard. Taste the dressing before you add it to the salad – you’ll be shocked at how delicious it is!
You can use this dressing for other things, too! Spread it as a special sauce on keto sandwiches, or use it as a sauce on your burgers, or a dressing for other salad recipes.
Keto Ham Salad
Even though this salad is made with both ham and veggies (cabbage, zucchini, and tomatoes), each serving only has 3 grams net carbs. That’s why this is one of my favorite keto lunch ideas. I can eat enough to get full – without going over on my carbs.
And this salad is really easy to customize, too! If you don’t like tomatoes, leave them out. If you don’t like zucchini, use yellow squash or even turnips instead. And if you don’t have sour cream, use unsweetened plain Greek yogurt as a replacement.
What To Eat With Salad
Soup is my favorite thing to eat with a salad. This salad is low-carb and still hearty, so serve it with a lighter soup.
Try it with this Keto turmeric zucchini soup that’s light but bold or this Low-Carb dill pickle soup that is bursting with fresh flavor from the dill.
If you’re really hungry, then make a keto bread bowl with cream of chicken soup. It will fill you up! And this salad also tastes delicious with keto French Onion soup. You’ll love how they taste together.
How To Store Salad
Store leftover salad in an airtight container and keep it in the refrigerator for up to three days. After about three days, the dressing will soak into the vegetables and cabbage and soften them.
Honestly, this salad tastes best when it’s freshly made. You can still add it to your weekly meal prep, but eat it within a day or two for the best results.
