This rich keto chicken cauliflower chowder is the perfect replacement for potato soup. The added bacon is the best part!
What Is A Chowder
A chowder isn’t just another name for a soup, it’s a specific kind of soup. It’s usually thickened with milk or cream.
But some versions thicken it with a flour-based roux. Then, it’s filled with some kind of meat and vegetables.
The most popular type of chowder is the New England clam chowder. Then, people usually put oyster crackers or Saltines in their soup or eat them on the side.
My recipe only has 4 grams net carbs in each serving. It’s just as rich and creamy as a traditional chowder because I made it with chicken broth and heavy whipping cream.
Keto Cauliflower Chowder
My first ever low-carb bacon cauliflower chowder was a huge hit. I loved it!
I wanted to make it more filling. So, I adjusted a few things and now I think this recipe is pretty darned perfect!
Adding the chicken and making it thicker with more heavy whipping cream was the perfect choice.
But you can still make changes to this if you want. If you want this to be a side-dish, then leave the chicken out.
If you like extra-creamy chowders, then add a bit more heavy cream. And if you want it to be even cheesier, top it with some shredded parmesan cheese.
Chicken and Cauliflower Chowder
This is the perfect way to use up leftover cooked chicken. It will taste delicious with Cajun chicken, Italian chicken, or even Mexican-flavored chicken!
All the spices will go really well together in this delicious chowder. If you don’t have any leftover chicken in the refrigerator, grab a rotisserie chicken from the grocery store.
Then, steam a bag of frozen cauliflower florets and dinner will be ready in less than 30 minutes.
What To Eat With Chowder
This is a very creamy, very rich, very filling soup. Serve your soup with these keto rosemary rolls.
This keto cornbread dressing is another side dish that will taste amazing with the flavors in this chowder too. I like to enjoy crackers with my soups, so either munch on some pork rinds with it or make your own cheese crisps.
These pumpkin breadsticks are fun to dip into the soup too, or just eat by themselves on the side.
How To Store Chowder
This keto chicken chowder works really well in your meal prep too. It’s so rich that you can enjoy it by itself for lunch.
It really will fill you up! Since it is a chowder, I like to keep it in a mason jar with a lid that screws on nice and tight.
It will stay fresh in the refrigerator for up to a week.
When you are ready to reheat it, I suggest heating it on the stove. This way it will heat evenly and melt all the ingredients together again.
