What Does Antipasto Mean
Literally, antipasto means before meal. Anti is latin for before and pastus is latin for meal. So you could call antipasto dishes appetizers.
But I’m about to turn that meeting around because this chicken recipe is filling and delicious enough to be your entire meal!
It’s called antipasto stuffed chicken because the chicken is stuffed with the types of meat and cheese that are usually on appetizer-like charcuterie boards!
Antipasto Stuffed Chicken
There is a lot of room for culinary creativity in this recipe. Use your favorite type of cheese and cured meat!
I used provolone and mozzarella cheese, but this would taste delicious with some Pecorino Romano cheese, goat cheese, or even Parmigiano-Reggiano cheese.
I think the sliced salami is perfect in the chicken. But you could replace it with some pepperoni or even some prosciutto.
Easy Hasselback Chicken
Have you heard of hasselback potatoes? It refers to the way the potatoes are sliced – not all the way through – and stuffed with cheese and spices.
I took that idea and used it on the chicken! This isn’t a traditional stuffed chicken recipe. Instead of slicing once in the middle, I made a lot of little slices that don’t go all the way through the chicken and then stuffed each area with meat and cheese.
The result is a different experience in each bite!
Keto Chicken Breast
Since you’ll be stuffing the chicken breast, I suggest making this with thick chicken breasts, not chicken breast tenders or chicken thighs. You need enough meat to slice and stuff.
It’s also important to cook chicken all the way through. I use a meat thermometer. Chicken should be cooked until it reaches an internal temperature of 165F.
What To Eat With Chicken
This chicken recipe is bursting with so much flavor that you’ll want to serve it with some lighter sides. It’s the perfect Italian recipe, so make some Italian sides to go with it.
For something cold, add some easy keto broccoli salad to the table. Some keto dinner rolls and fluffy cauliflower mash will also taste perfect. In fact, I like to serve the antipasto-stuffed chicken on top of cauliflower mash, like you would for mashed potatoes.
For a veggie, make bacon and green beans. The mild, savory flavors pair well with the bold meat and cheese in the chicken.
Other sides to add to the table include garlic knots, or keto breadsticks. Just add your favorite low-carb breads to the side and dinner is ready. If you want more veggies to the dinner, add a broccoli salad.

Ingredients:
Boneless skinless chicken breast
Olive oil
Italian seasoning
Garlic powder
Slices provolone cheese
Slices mozzarella cheese
Pepperoncini pepper rings
Slices of Sliced salami
Salt and pepper
Instructions:
Preheat the oven to 425 degrees.
Heat the olive oil in a skillet over medium high heat.
Sprinkle the chicken with garlic powder, Italian seasoning and salt and pepper to taste.
Sear the chicken on both sides in the heated skillet until just browned. Remove the chicken and place into a well greased 9×13 baking dish.
Use a sharp knife to slice slits along the top of each chicken breast, being sure not to slice all of the way through.
Stuff a slice of provolone cheese, a slice of mozzarella cheese and three slices of sliced salami in each chicken breast.
Top with the pepperoncini peppers.
Bake for 15-20 minutes until cooked through.
