I have small kiddos, so just about every single recipe on my blog will be really simple. I’m also a foodie, so even though I’m not spending hours in the kitchen, my recipes still taste as if I did. This keto curry rice is no different.
15 Minute Cauliflower Rice
I love recipes that I can make quicker than the time it takes for delivery to arrive! That removes any temptation to order takeout. This recipe tastes like classic curry rice from my favorite Indian restaurant. All those thoughts about cauliflower having no flavor don’t apply to this recipe!
The entire dish takes 15 minutes from start to finish. To speed things up, I used frozen cauliflower rice.
If you want to use fresh cauliflower, I suggest using a food processor to chop up the florets into the rice. Using a knife works too, but it is a lot messier and takes a lot more time. It is so much easier to use frozen cauliflower rice than it is to try and chop up your own head of cauliflower.
Keto Curry Recipe
What sets this recipe apart from other cauliflower rice recipes is the bold taste from the curry powder. When you cook with curry, add some paprika, garlic, and onion to balance it out. The result is a robust rice that fills your entire mouth with flavor.
There are a lot of different ways that you can customize this recipe and change things up. Instead of cauliflower rice, follow the instructions and use cauliflower florets. They sell pre-chopped cauliflower florets in the produce section or use frozen florets.

This cauliflower rice reheats beautifully in the microwave, so use it in your next meal prep. Just store it in a sealed container in the refrigerator for up to 3 days.
In fact, you can create a filling and complete meal just by adding a few ingredients to it! Buy some pre-made rotisserie chicken, shred it up, and divide it into meal prep containers with the curry rice.
Then, eat it for either a low carb lunch or dinner, it’s perfect for both of them!
Low-Carb Curry Sauce
The low-carb curry sauce really sets this recipe apart from other cauliflower rice recipes you can make. It’s so easy, you’ll want to make it over and over again.
All you need is some curry powder, paprika, onion powder, minced garlic, and olive oil.
If you don’t have minced garlic, you can use garlic powder as a substitute.
What can you substitute for curry powder? If you don’t have curry powder you can use turmeric instead, since there is a lot of turmeric in curry.
Or, you can also just make your own curry powder.
Best Curry Cauliflower Recipe
I think the green and red bell peppers add a wonderful crunch to this dish too, so don’t leave them out. I like to garnish it with some fresh cilantro or parsley. If you don’t have time for a garnish, don’t worry about. That part is completely optional.
