In order to make these tortilla chips low in carbs, I used a combination of mozzarella cheese and almond flour. They turn out perfectly crunchy, thanks to the almond flour.
When you make these chips, use almond flour, not almond meal. If you use almond meal, the chips will have a grainy texture that isn’t very noticeable in the chips but could be distracting.
Even though I used cheese to make the chips, you can store them at room temperature. Keep them in an airtight container or food storage bag and they will stay fresh for a few weeks.
Chili Lime Tortilla Chips
There are only 4g net carbs in each serving of chips. I used fresh lime juice, spicy chili powder, and earthy garlic powder to flavor them.
If you really want them to be spicier, I suggest adding a dash of cayenne pepper or paprika. This will leave some heat on your tongue.
Or, go the opposite way with the spices. Make the chips even milder. Omit the chili powder and just add lime juice and some salt. This will give you chips that let the dip stand out, not the taste of the chips.

Instructions:
1. Preheat the oven to 350 degrees.
2. Place the mozzarella cheese in a microwave-safe bowl, and heat at 30 seconds intervals in the microwave until completely melted and formed into a dough ball.
3. Add the almond flour into the melted cheese mixture, and knead with your hands until well combined.
4. Sprinkle the salt, chili powder, lime juice, and garlic powder over the dough, and knead with your hands until well incorporated.
5. Roll the dough out between two pieces of parchment paper until it is about ¼ of an inch thick.
6. Use a pizza cutter to slice the dough into triangles in the shape of tortillas chips.
7. Transfer the chips onto a parchment-lined baking sheet and bake for 10-12 minutes until crispy.
