This recipe is a boredom-busting quick and easy casserole that you can whip together in minutes. In fact, I kept the recipe really basic so that you can build on it and make it completely customized.
It’s a wonderful way to use leftover cooked chicken. Or, save yourself time and just shred up a rotisserie chicken.
There are 6g net carbs in each serving, so this falls under “low-carb” instead of “keto-friendly.” If you watch your macros throughout the day, you shouldn’t have any trouble indulging in this scrumptious casserole!
BBQ Chicken Casserole Low-Carb
Since this recipe has a few more net carbs than other recipes, I suggest splitting a serving between both lunch and dinner. If you split it up this way, add lots of steamed or roasted veggies on the side or eat it with a large chopped salad.
This spicy egg salad is only 2 net carbs per serving. It’s the perfect thing to add to your meal.

There are lots of ways you can customize this low-carb chicken casserole. Add your favorite vegetables to it. I think some chopped yellow squash and zucchini would really add color and flavor.
Top it with some fresh green onions and some crumbled bacon for a little more saltiness and crunch. I used shredded cheddar cheese, but you can use shredded parmesan instead.
Any type of bell pepper tastes the same in this recipe – use green, red, or even yellow. Chopping up some jalapenos and adding them in will bring in some serious heat!

Tessemae’s is another brand that produces excellent marinades, sauces, and salad dressings. Their BBQ sauce is sweetened with sucralose so it has the lightly sweet taste that you will enjoy.

Ingredients:
Butter
Red bell pepper
Onion chopped
Chicken broth
Chopped cabbage
Sugar-free bbq sauce
Minced garlic
Shredded chicken
Shredded cheddar cheese
Instructions:
Preheat the oven to 350 degrees.
Melt the butter in a skillet over medium-high heat on the stove.
Add the onions and peppers to the skillet, and saute until they soften.
Pour the chicken broth into the skillet and reduce the heat to medium.
Mix in the chopped cabbage and add salt and pepper to taste. Cover and saute, stirring often until the cabbage begins to soften.
Stir in the garlic and saute for another 30 seconds.
Mix in the shredded chicken and bbq sauce until combined well.
Pour the mixture into a 9×13 baking dish.
Top with the shredded cheddar cheese and bake for 20 minutes.

- 1/2 Red Bell Pepper chopped
- 1/4 cup Chicken Broth
- 1/2 Onion chopped
- 3 cups Cabbage chopped
- 1/2 cup Sugar-Free BBQ Sauce
- 2 tsp Garlic minced
- 2 cups Chicken shredded
- 1 cup Cheddar Cheese shredded
Instructions
