Creamy Keto Salmon Soup
I had a lot of fun making the recipe for this soup! It’s inspired by a Latin dish called “Bacalao” which was a childhood favorite. It’s normally made with potatoes and onions and served with rice.
I made a few changes to that recipe to make it ket0-friendly, and I think it tastes just as good, if not a bit better.
This stew only has 4g net carbs in each serving – so I usually have two bowls of it. It’s not too spicy and tastes amazing on cold and rainy days to warmer days with a chopped salad.

Bacon makes it extra flavorful but it’s totally optional. If you do use bacon, always use sugar-free bacon. It’s amazing how many hidden sugars are in maple-cured bacon.
How To Prepare Salmon Stew
This stew is the best thing to make for your meal prep. You can also make it ahead of time and store it in the fridge so it’s ready when you need a really quick meal.
Store it in an airtight container in the refrigerator for up to a week. When you are ready to reheat it, just place it in a saucepan and heat it for about 10 minutes.
You can also store it in the freezer. Just place it in a freezer-safe container or resealable plastic bag. It will stay fresh in the freezer for up to 6 months. Let it thaw overnight in the refrigerator and it will be ready for you the next day.
Keto Creamy Stew
The coconut milk and cream cheese are what make this stew so incredibly creamy. Use canned coconut milk – not the carton in the refrigerated section. The canned coconut milk is thicker and has more fat, so it will make the stew extra creamy.
Use either fish or vegetable stock. I like to make my own vegetable broth and keep it in the freezer whenever I am in the mood to make a soup.
Salmon Stew With Coconut Milk
This stew is the perfect lunch. Serve it with your favorite salad, some low-carb garlic butter mushrooms, or with garlic butter cauliflower rice. Then you have a really filling meal.
It will also taste amazing with my keto garlic knots. I like to dip the garlic knots in the stew – it is so good!

Butter
Celery
Medium onion
Garlic
Tomatoes
Tomato paste
Capers
Fish or vegetable stock
Flaked salmon
Dried basil
Bay leaf
Canned coconut milk
Cream cheese
Salt and pepper
Fresh chopped bell pepper and bacon crumbles for garnish
Instructions:
Melt the butter in a pot over medium heat on the stove.
Add the onion and celery to the pot and saute until softened.
Mix in the garlic and saute another 30 seconds.
Whisk in the diced tomatoes, tomato paste, capers, dried basil, bay leaf and cream cheese. Saute until the cream cheese has melted completely.
Add in the vegetable or fish stock, and whisk to combine.
Bring the mixture to a low boil, add in the salmon and coconut milk. Stir to combine.
Season with salt and pepper to taste, and simmer for another 5-10 minutes.
Garnish with fresh chopped bell pepper and bacon crumbles before serving.

- 1/2 cup Celery chopped

- 1/2 cup Diced Tomatoes
- 1 tbsp Tomato Paste
- 2 tbsp Capers
- 3 cups Vegetable Stock can also use fish stock
- 8 ounces Salmon cooked and flaked
- 1 tsp Dried Basil
- 1 Bay Leaf
- 1 cup Coconut Milk canned
- 2 ounces Cream Cheese
Instructions
