Imagine your two favorite desserts combined into one amazing treat. Then, imagine that this dessert is both low-carb and gluten-free (and actually pretty good for you).
My two favorite things are pecan pie and chocolate cake, and I put them together to create an epic muffin that you can eat for breakfast but feel like you’re indulging in an incredible dessert.
Both the muffin and the topping are filled with ingredients that are both good for you and tasty at the same time. The chocolate muffin is made with coconut flakes (healthy fats), chopped pecans (good protein), and almond milk.
In fact, you could consider them dairy-free if you replace the butter with ghee.
Chocolate Pecan Muffins
Chances are you will fall in love with these muffins after just one bite. They taste amazing when they’re fresh out of the oven.
If you let them cool down, you can add the sugar-free caramel sauce and a few pecans to make them look (and taste) even more like pecan pie.
I’ll be honest, I struggle with whether to call them muffins or cupcakes. They have a soft texture that reminds me of a cupcake, but are healthy enough to be a muffin.
Since I didn’t really add any frosting, I guess they qualify as keto chocolate muffins.
Keto Chocolate Muffins
It might shock you to realize that there are only 4 grams net carbs in each rich, fudgy, chocolate muffin. But that’s accurate!
You can eat them for breakfast or at the end of your lunch – all without going over on your macros!
One quick note about the almond flour. Please, double check your ingredients and make sure you don’t use almond meal on accident.
They look identical and are sold together in the store. It’s easy to mix them up but if you use almond meal, the muffins will have a slightly grainy texture to them.

How To Store Muffins
I suggest storing these rich pecan muffins in a sealed, airtight container and keeping the muffins in the refrigerator. They will stay fresh for up to three days.
You can freeze them, too. First, place the muffins – uncovered – on a baking sheet.
This will freeze them. Then wrap each muffin in plastic wrap and put them together in an airtight and freezer safe food storage bag.
Keep the muffins in the freezer for up to six months.

- Pecans chopped + A few whole pecan halves for garnish
- Keto chocolate chips
- Large eggs
- Vanilla
- Swerve brown sugar substitute
- Unsweetened coconut flakes
- Baking powder
- Almond milk
- Cocoa powder
- Melted butter
- Sugar free caramel sauce for garnish
Instructions:
Preheat the oven to 350 degrees. Blend together the almond flour, Swerve, baking powder and cocoa powder in a mixing bowl.
Add the eggs, vanilla, almond milk and melted butter to the mixing bowl, and blend until smooth.
Fold in the pecans, chocolate chips and coconut flakes.
Place cupcake liners into the sections of a muffin tin, and fill the liners ⅔ of the way full with the batter.
Bake for 20 minutes, or until the muffins are cooked through.
