Sausage Shepherd’s Pie
This is a fun and easy way to enjoy Shepherd’s pie without the additional carbs from the mashed potatoes. Traditionally, shepherd’s pie is made with meat and vegetables layered in a casserole dish with creamy mashed potatoes.
To cut down the carbs, I used portobello mushrooms and mashed cauliflower. The results are still just as hearty and everyone is going to love this new twist!
Shepherd’s Pie With Mashed Cauliflower
This recipe still has all the classic flavors that you love about Shepherd’s pie. I will admit that the mashed cauliflower doesn’t exactly have the same mouth feel as mashed potatoes.
But it still tastes just as delicious, especially if you flavor it with lots of butter and garlic.
The portions in this recipe are very large (as portobello mushrooms are quite monstrous). If you are on a strict keto diet, cut the mushroom in half and eat just one part at a time.
Portobello Dinner
There are actually quite a few ways you can serve this recipe. It’s perfect as a filling lunch – just add a salad on the side.
You can also serve it for dinner (I would add some steamed vegetables with it). Or, just dish this up at your next party as a fun appetizer! The options are endless.
Sausage Stuffed Portobello Mushrooms
I used a combination of ground beef and sausage as the meat in this shepherd’s pie. You can use any type of ground meat that you enjoy. Try it with just sausage.
Or, add some ground chicken and turkey into the mix. I love making this in a different way each time. It almost becomes an entirely new meal with just a few minor changes.
Easy Healthy Shepherd’s Pie
Mushrooms are an amazing source of calcium and vitamin D. They are also really high in protein. This meal is so healthy for you and your family!
If you want to increase the “wow” factor, just add some shredded cheese to the mushrooms. Everything is better with cheese!
The best thing about this recipe is that you can cut this down and make just one mushroom for yourself, or you can make a bunch for the entire family!
How To Store Low-Carb Shepherd’s Pie
If you have leftovers, just store them in a sealed container in the refrigerator. They will stay fresh for up to 3 days. I like to make them for lunch one day and keep the leftovers for my meal prep for the next day.
