Keto Taco Casserole With Cauliflower Rice
If you are looking for another fun choice for Taco Tuesday, then this casserole is perfect for you. It’s also a really easy recipe to make for a Cinco de Mayo dinner. It is full of classic Mexican flavors and really easy to make as mild or spicy as you want.
I created a really mild recipe because my kids aren’t fans of spicy foods. To make it spicier, chop up and add some jalapenos or serrano peppers. You can also add pepper jack cheese.
Keto Taco Bowl Cauliflower Rice
This recipe takes just 30 minutes to make, but there are a few ways you can save even more time. If you make individual taco bowls, you can avoid the 20-minute baking time.
Just make the ground turkey mixture and use frozen and steamed cauliflower rice. Then pour all of these ingredients into individual bowls. If you make individual taco bowls, you can even add some sour cream, guacamole, and shredded lettuce on top.
It’s a fun way to let everyone in your family build their own bowls.
Keto Taco Casserole
This keto taco casserole is so filling that it is almost a complete meal. Ground turkey, cauliflower rice, cheese, and Rotel tomatoes – you have the meat and veggies in one dish.
Serve this just like it is, as a family casserole. Or, serve it on top of your favorite low-carb tortillas. Serve it with some homemade guac, salsa, and some homemade keto tortilla chips.
If you like cheese a lot, feel free to use more! I used shredded cheddar cheese, but you can definitely use any type of cheese that you want. Head to the deli department and find some spicy types of cheese and add some heat to your casserole.
Turkey Taco Casserole
I used ground turkey because it is lower in saturated fat than ground beef. Plus, it’s a budget-friendly protein source too, usually priced lower than ground beef.
Any type of ground meat will taste delicious in this casserole. Try it with ground beef or even sausage. If you use ground chicken, I suggest adding a little more chili powder since chicken has such a mild flavor.
Cheesy Taco Casserole
This is the perfect thing to add to your keto weekly meal planning. To store leftovers, just keep them in an airtight container in the refrigerator for up to three days. Eat this casserole within the three-day window. It tastes better the fresher it is.
I also like to add more cheese when I reheat it – it makes it taste so much better.
Keto Taco Rice Casserole Recipe

Ingredients:
Ground turkey
Frozen cauliflower rice
Shredded cheddar cheese
Can Rotel
Chili powder
Cumin
Paprika
Garlic powder
Salt and pepper
Instructions:
Preheat the oven to 350 degrees.
Brown the ground turkey in a skillet over medium high heat until completely cooked through. Drain excess fat if needed.
Reduce the heat to low, and stir in the cauliflower rice, chili powder, cumin, paprika, garlic powder and salt and pepper to taste.
Add in the Rotel and ½ cup of the cheddar cheese. Stir to combine well.
Spread the mixture in a well greased 9×9 baking dish and top with remaining cheese.
Bake for 20 minutes.
