That’s because it isn’t just flaky tuna wrapped in a cheddar cheese wrap. The creamy sauce is robust, with sweet red onion, tart celery, and rich cream cheese. If you have a blender or food processor, use it to mix the sauce together.
If you don’t, that’s fine too, but you’ll want to use an electric mixer in order to get it to completely mix together.

You don’t have to make and use cheddar cheese wraps for this recipe. You can use your favorite type of low-carb bread or wrap. The reason I love using the cheese wrap is that it gives the melts a nice crispy texture.
I also love that with the cheddar cheese wraps, each one only has 3 grams net carbs. Some keto tortillas are pretty high in net carbs.

If you can, I suggest grating cheddar cheese at home. It will have a better flavor and create a better wrap for you.
These roll ups taste best when they are hot and fresh out of the oven! I don’t suggest trying to store them for longer than a day or so.

Ingredients:
Large can of tuna fish drained well
Shredded cheddar cheese
Butter
Red onion
Celery
Heavy whipping cream
Cream cheese
Parmesan cheese grated
Dijon mustard
Salt and pepper
Instructions:
Preheat the oven to 400 degrees. Melt the butter in a small skillet or saucepan over medium heat.
Place the cream cheese, heavy whipping cream, dijon and salt and pepper to taste into a food processor or blender, and pulse until smooth.
Add the cream sauce to the skillet with the butter, and whisk until smooth and thickened. Remove the sauce and let cool.
Line a large baking sheet with parchment paper or a silicone baking mat.
Arrange the cheese into 6 small circles on the baking sheet, leaving some room between each circle.
Bake for 6-8 minutes until the cheese takes on a lace-like appearance, and the edges start to brown and crisp up.
While the cheese is baking, combine the tuna fish, celery, red onion, parmesan and cream sauce in a bowl until well blended. Add salt and pepper to taste.
Remove the cheese from the oven, and let cool for a few minutes. While the cheese circles are still pliable, add a layer of the tuna fish filling down the center of each one.
Carefully roll the cheese circles up and over the filling. Allow to rest until cooled and the cheese has become crispy.
