Keto Seven Layer Salad
Seven layer salad is a classic southern recipe. It’s a salad that feeds a crowd, so you’ll often see it at potlucks or family dinners. Some people layer it in a trifle dish so you can see all the different ingredients, but it’s definitely not required.
I took the classic recipe and gave it a low-carb twist! Each serving only has 5 grams net carbs. Keep reading and I’ll share how to change it up and make it just how you want it.
What Is In A Seven Layer Salad
It’s usually made with iceberg lettuce, cucumbers, tomatoes, hard-boiled eggs, peas, cheese, and bacon. Then, it’s all topped with a sweet and tangy mayo-based dressing.
I tried to keep the original seven layers the same since they are all basically low-carb ingredients. The only thing I changed is the dressing. I made it low-carb by using sugar-free honey instead of real honey.
If you’ve been eating keto for a long time, you might think that peas aren’t keto-friendly. That’s true. But a small amount doesn’t add very many carbs. I added just one cup in the entire salad.
What To Eat With Salad
This is a flavorful salad that you could eat by itself for lunch! The hard boiled eggs and bacon make it really filling and the perfect keto-friendly lunch.
If you’re going to serve it for dinner, make it with some mayo roasted chicken or keto air fryer turkey breast. Both entrees are mild enough that the salad is able to stand out.
Add keto cream cheese green beans as the other side dish and you have a family dinner, ready to go! This would even taste delicious with a dinner of keto fried chicken!
Talk about a classic southern meal.
How To Store Salad
With the dressing, this salad will only stay fresh for about 2-3 days. The dressing will eventually soften the lettuce and the red onions will permeate everything, so eat it as soon as you can.
Store this salad in an airtight food storage container and keep it in the refrigerator.
Easy Keto Salad
This is the perfect last-minute salad to throw together. To save yourself even more time with food prep, hardboil your eggs ahead of time or buy some hardboiled eggs from the grocery store.
Fry up some bacon and keep it in the fridge and store the dressing in a mason jar with a lid. Then, all you have to do is add all the ingredient together and serve it.
It’s so easy!
