This comforting low-carb Amish broccoli salad is an effortless medley of vegetables covered in a tangy dressing. It’s the kind of side dish that’ll steal the show at picnics, potlucks, or even just a cozy family dinner.
Amish Broccoli Salad
Maybe you’ve heard of Amish potato salad or macaroni salad. But what is Amish salad?
It’s a salad that has a recognizable mayonnaise-based dressing. Some recipes mix mayo with Greek yogurt, but I mixed mayonnaise with sour cream.
If you need more protein in your macros, I suggest using Greek yogurt instead of sour cream in my recipe. It will keep the flavors pretty much the same.
The bacon is the other ingredient that you’ll find in almost all types of Amish salads. Of course I added bacon to the broccoli! The result is a nutritious and delicious salad that you can eat for lunch without needed anything else on the side.
Low-Carb Broccoli Salad
Even though it’s called a broccoli salad, I added some cauliflower and red onion to it too. I think the combination of the different kinds of vegetables makes it taste better.
If you don’t like cauliflower, make this with only broccoli. It will still taste delicious and if you think that red onion tastes too powerful, use white onion instead.
In fact, there are a few different veggies you can add to the salad with the broccoli. Try it with some cubed green bell pepper or some chopped cucumbers.
Easy Amish Salad
Amish salad is a staple side dish for potlucks, family dinners, and cookouts. And this broccoli Amish salad is as perfect and tasty as potato or macaroni salad.
How can you change this recipe? The easiest way to change up the recipe is to change the type of cheese you use.
I used shredded cheddar cheese. It’s mild and the flavors match the mayo and sour cream dressing really well but make the flavors stand out by using pepper jack cheese or Monterey jack cheese.
And instead of using shredded cheese, some cubed cheese will taste good with the dressing, too. I think that cutting up cheddar cheese into bite-sized cubes is easier and quicker than shredding it.
Finally, change up the type of vinegar you use. Apple cider vinegar has a wonderful flavor, but you can replace it with white vinegar or red wine vinegar and still get the same flavor.
What To Eat With Salad
Since this is a creamy salad, I suggest serving it with something lighter. For the main course, keto pan seared chicken thighs are the perfect fit.
You can also serve the salad with low-carb air fryer corned beef. This creamy salad is also perfect with a spicy bowl of keto Cajun chicken and shrimp soup.
I’m a huge fan of cheese roll-ups because they are so easy and full of protein. Keto sausage lasagna roll ups will taste amazing with the Amish salad.
How To Store Salad
Since this salad is made without lettuce, you can eat it up to three days later without the texture change. In fact, you can store everything in the same container – you don’t have to separate the dressing from the salad.
Keep the broccoli salad in an airtight container and eat it within three days to get the best results. After about three days, the ingredients in the dressing might start to separate a bit.
