There are just six simple ingredients in this delicious broccoli side dish. And the best part is that you probably already have everything in your pantry or refrigerator!

The combination of cream cheese and sour cream is iconic. It coats the broccoli perfectly and makes it taste both tangy and slightly sweet. In fact, the flavor is so incredible, that you’ll enjoy eating broccoli! 

This is the perfect casserole to make if you’re feeding a family, a dinner party, or you need something to take to a pot luck. Since it’s keto-friendly, it’s also naturally gluten-free, so it’s good for people with food allergies or sensitivities.

You can flavor it with any seasoning mix that you want but I’ve found that ranch dressing tastes the best with the broccoli and cheese mixture. It just elevates so much that it’s tough to stop eating it!

Thankfully, there are just 5 grams net carbs in each serving. So you can enjoy an extra serving if you have the carbs in your macros that day! 

Cheesy Ranch Broccoli Bake 

Can you use frozen broccoli in the casserole? No, I don’t recommend using frozen broccoli.

You should only use fresh broccoli in this side dish. The reason you want to use fresh broccoli is because frozen broccoli has more moisture in it and as it bakes, it will release that moisture and make the cheese sauce too thin. 

What other vegetables can you bake with broccoli? Add some cauliflower florets to the broccoli and bake them together. You can also add some sliced onions and mushrooms to the casserole too.

Remember that every time you add more vegetables, you’ll be increasing how many net carbs in are in each serving. 

What To Eat With Broccoli 

Since this is a rich side dish, I suggest serving it with a lower-carb and lighter entree.  Low-carb corned beef slaw has both veggies and meat, so it’s a great choice.

How To Store Cooked Broccoli 

Since this casserole is made with both cream cheese and sour cream, I suggest eating it as soon as possible. Store leftovers in an airtight container in the refrigerator for up to three days.

Then, reheat the broccoli casserole in the microwave. As it sets in the fridge, the cheese will solidify a bit but all you have to do is reheat it and it will melt back to it’s yummy state.

Ingredients: 

  • Fresh Broccoli Florets
  • Water
  • Cream Cheese
  • Sour Cream 
  • Ranch Dressing 
  • Shredded Cheddar Cheese 

Directions 

Steaming the Broccoli

Preheat the oven to 350 degrees. Prepare a 9×13 casserole dish with nonstick cooking spray.

In a large microwave-safe bowl, place the broccoli and water. Season the broccoli with salt and black pepper as desired. Cover the bowl with plastic wrap or a vented lid. Microwave on high for 6 minutes, stirring halfway, or until the broccoli is tender. Drain well. Place the broccoli into the prepared baking dish.

In a large bowl, beat together the cream cheese, sour cream, and ranch dressing until well blended. Add half the cheese and season with salt and black pepper.
