This comforting cheesy broccoli rice casserole is a complete meal! With broccoli, cauliflower rice, and ham instead of chicken – you’ll love it!

Cheesy Low-Carb Broccoli Rice Casserole With Ham

Broccoli Rice Casserole

Whether you want a break from cauliflower rice or you want a new tasty way to cook broccoli, this recipe will quickly become one of your favorites. The cheese, the cauliflower rice, broccoli florets, ham, and all that spice – it’s enough to make you want to bake it every week!

The best thing about this recipe is that it’s ready in less than 45 minutes! This casserole is filled with both meat and vegetables, so it’s an entire meal in one dish. If one of your favorite recipes as a kid was chicken and rice casserole, then you’ve got to try this.

How To Rice Cauliflower

You’re probably thinking, why make cauliflower rice if they sell steamable cauliflower rice in the frozen section? You can definitely use steamed frozen cauliflower rice, but make sure you remove all the water from it that you can before you add it to the casserole.

Any water that gets into the casserole could make it runny.

The best way to make cauliflower rice is to use a food processor. Pulse cauliflower florets until they are the consistency of rice. Then, use a large skillet to cook the cauliflower rice with some oil and spices. This will tenderize it so it’s not so crunchy without having to deal with extra water.

Broccoli Rice Cheese Casserole

What types of cheese taste better with broccoli, cauliflower rice, and ham? I used a combination of cream cheese, heavy whipping cream, and cheddar cheese.

If you want to change the type of cheese that you use, then I suggest using another type of hard cheese so it has the same texture.

For a bit more bite, shred some Asiago cheese. For a smokier flavor, use gruyere cheese and for a nuttier flavor, use pecorino romano cheese.

No matter which type of cheese you use, shred it at home instead of buying the preshredded variety. It will taste so much better.

Broccoli Ham Casserole

This is a fantastic way to use leftover ham from a family or holiday dinner. In fact, I have a delicious recipe for keto baked ham with honey mustard glaze.

It will taste amazing in this casserole. Cut the ham into tiny pieces and mix it into the casserole.

It will taste perfect with a bowl of keto ham bone and veggie soup. Then, you just need some keto-friendly bread to add to the table. I love keto garlic knots or low-carb everything bagel breadsticks.

Both will taste delicious with this casserole!

How Long To Store Broccoli Casserole

This casserole tastes best when it is hot and fresh out of the oven. But you can still enjoy it up to three days later. Keep extra servings in an airtight container in the refrigerator for up to three days.

Since it’s made with cream cheese, the casserole might harden a bit. All you have to do is heat it up in the microwave and it will melt and be delicious.
