How To Rice Cauliflower
You’re probably thinking, why make cauliflower rice if they sell steamable cauliflower rice in the frozen section? You can definitely use steamed frozen cauliflower rice, but make sure you remove all the water from it that you can before you add it to the casserole.
Any water that gets into the casserole could make it runny.
The best way to make cauliflower rice is to use a food processor. Pulse cauliflower florets until they are the consistency of rice. Then, use a large skillet to cook the cauliflower rice with some oil and spices. This will tenderize it so it’s not so crunchy without having to deal with extra water.

What types of cheese taste better with broccoli, cauliflower rice, and ham? I used a combination of cream cheese, heavy whipping cream, and cheddar cheese.
If you want to change the type of cheese that you use, then I suggest using another type of hard cheese so it has the same texture.
For a bit more bite, shred some Asiago cheese. For a smokier flavor, use gruyere cheese and for a nuttier flavor, use pecorino romano cheese.
No matter which type of cheese you use, shred it at home instead of buying the preshredded variety. It will taste so much better.

Ingredients:
Broccoli florets cooked and cut into small pieces
Cauliflower rice cooked
Butter
Onion chopped
Heavy whipping cream
Minced garlic
Mustard powder
Paprika
Cream cheese softened
Shredded cheddar cheese divided
Diced ham
Salt and pepper
Instructions:
Preheat the oven to 350 degrees. Melt the butter in a pot over medium heat.
Add in the onions, and saute until softened.
Stir in the garlic, and saute for 30 seconds.
Mix in the mustard powder, paprika and cream cheese. Stir until the cream cheese has melted.
Slowly stir in the heavy whipping cream, whisking as you do. Simmer until the sauce thickens.
Add 1 cup of the cheddar cheese to the sauce, and stir until melted. Season with salt and pepper to taste.
In a large mixing bowl, combine the cauliflower rice, broccoli and ham.
Pour the cheese sauce over the ingredients in the mixing bowl. Stir to combine well.
Spread the mixture into a well greased 9×13 baking dish.
Sprinkle with the remaining cheese.
Bake for 20-25 minutes.
Allow to sit 10 minutes before serving.

- 1/2 Onion chopped
- 1 1/2 cups Heavy Whipping Cream
- 2 tsp Minced Garlic
- 1/2 tsp Mustard Powder
- 1/2 tsp Paprika
- 4 ounces Cream Cheese softened
- 1 1/2 cups Shredded Cheddar Cheese divided
- 8 ounces Diced Ham
