Fresh and crispy corned beef slaw is a delicious way to use leftover corned beef! This keto-friendly recipe is also a tasty lunch.
Corned Beef Slaw
If you love the combination of salty corned beef and crispy cabbage, then this revamped cole slaw recipe will quickly become one of your favorites! The tender strips of beef combine with the tangy dressing and fresh veggies to make a salad that makes you glad you’re eating healthy.
The best way to make this recipe is to start out with an easy air fryer corned beef. It always comes out with the perfect texture for adding to your salad or slaw.
Beef Coleslaw
While you could substitute any steak or beef roast for the corned beef, you won’t get the same combination of flavors. Corned beef has the perfect balance of salty and savory notes so it balances out the sweet and tangy flavors of the slaw.
The good news is that you don’t have to add the corned beef if you don’t have any left over! This slaw will taste just as delicious if you make it meatless.
With the meat, you can eat it by itself for lunch and get full. If you make it meatless, I suggest adding something high-protein to your plate.
The keto diet is all about protein and healthy fats!
Keto Coleslaw
I love making different types of coleslaw! It all started with my basic keto coleslaw recipe.
Then, I changed the dressing and made a low-carb Asian slaw. And for anyone that isn’t a fan of carrots, you can make a bell pepper slaw with cilantro lime dressing.
Then, I also combined the irresistible flavors of ranch dressing and bacon and made keto crack slaw. The jalapenos add the perfect amount of heat.
What To Eat With Coleslaw
Corned beef and cabbage is a traditional Irish meal, so I like to eat this on or around St. Patrick’s Day. Then, you can serve it with some keto-friendly versions of your favorite Irish recipes.
Instead of Irish soda bread, make some keto biscuits and serve them with pats of real butter. And instead of Irish stew, a bowl of low-carb shepherd’s pie soup will hit the spot!
Then, for dessert, a sweet keto Reese’s dip will make everyone happy!
How To Store Coleslaw
Eat this slaw throughout the week! Put leftovers in an airtight container and keep it in the refrigerator for up to three days.
As it sets in the fridge, the dressing will soften the cabbage. So, I suggest eating it as soon as possible.
I never recommend freezing coleslaw or any other type of salad. It changes the texture too much.
