Yes, you read that correctly. This is a recipe for ice cream made out of cottage cheese.

Low Carb Cottage Cheese Ice Cream With Sprinkles

You have to try it! It’s sweet without being overpoweringly rich and since you puree everything in a food processor, there aren’t any distracting cheese curds from the cottage cheese.

I made a vanilla ice cream with sprinkles instead of making a specific flavor. Most people like vanilla ice cream the most.

Plus, when you have vanilla ice cream, you have more freedom to add whatever toppings you want! 

Are Sprinkles Keto 

No, regular sprinkles are not keto-friendly. That’s why it’s important to find some sugar-free sprinkles.

Sugar-Free Sprinkles

If you can’t find sugar-free sprinkles, then grab a sugar-free chocolate bar and grate it. Now you’ll have keto-friendly chocolate shavings on top instead of sprinkles. 

With the sprinkles, this ice cream reminds me of birthday party cupcakes! This recipe makes about four servings.

So, if you’re going to serve it at a party, I suggest making a double batch.

No one can tell that this ice cream is sugar-free or made with cottage cheese. It will disappear! 

Low-Carb Ice Cream 

When it comes to low-carb desserts, this ice cream is higher in carbs. That’s why I called it low-carb ice cream instead of keto ice cream.

Using an ice cream scoop to get a scoop of homemade ice cream

There are six grams net carbs in each serving. There are 8 grams carbs in one cup of cottage cheese and most of the carbs are coming from that! 

Even with the high carb count, this is still a recipe that can fit in with your keto diet. In fact, when you’re seriously craving Dairy Queen, this can help you satiate those cravings without going over on your macros. 

What To Eat With Ice Cream 

Ice cream goes with almost any dessert that you make! Add some keto air fryer cinnamon sugar twists to a bowl of ice cream or go healthier and make some keto chocolate chip zucchini muffins with it.

If you’re going to serve the ice cream at a party, then make some low-carb cream cheese peach roll-ups or keto TikTok chocolate covered blueberry bites with the ice cream.

Ingredients

  • Cottage Cheese
  • Sugar-Free Honey 
  • Vanilla 
  • Sugar-Free Sprinkles

Directions

Adding sugar-free honey to the food processor

Add the cottage cheese to a food processor or blender, and pulse until smooth and creamy.

Mix in the honey and vanilla, and pulse until well combined and smooth.

Adding sprinkles to the cottage cheese mixture

Fold in the sprinkles.

Spread the mixture into a loaf pan, and garnish with additional sprinkles on top. Place into the freezer until set.

  • 1/2 cup Sugar-Free Honey
  • 1 tsp Vanilla
  • 1 tbsp Sugar-Free Sprinkles plus more for garnish
