Did you know that 6MM (23%) of Hispanics in the United States have diabetes, compared to 20MM of non-Hispanic whites? And that an estimated 57 million people have pre-diabetes in the US, with 35% of them are estimated to be Hispanic? I sure didn’t! What I did know is that my grandfather died of diabetic complications. I also have an uncle who’s trying his best to keep his diabetes under control and a cousin who’s basically pre-diabetic. It’s something that I’m very familiar with and I believe that we need to do all that we can to help spread awareness about diabetes within the Latino community.

To help spread awareness I decided to share my favorite sugar free Tropical Parfait that includes the Chocolate Caramel Glucerna Bars.
What you’ll need for one serving:
1 cup of greek yogurt
1/2 cup of unsweetened shredded coconut.
1/2 cup of sugar free canned pineapple.
1/2 cup of almonds.
3 Chocolate Caramel Glucerna Bars
How to:
Cut Glucerna Bars in half and chop into small pieces.
Spread some of the Glucerna bar at the bottom of a cup.
In a small bowl, mix greek yogurt and coconut and then place 3 tablespoons of mixture into the cup over the pieces of Glucerna bars.
Top it with pineapple and almonds.
Repeat layers until you fill the cup and then top it off with pieces of Glucerna Bar and coconut.
