Do you have a bunch of fresh vegetables from your garden and you’re looking for some new recipes to make with them? Or maybe you want to eat healthier, so you’re looking for low-carb salad recipes.

Well, you just found one of the best ones! This summer veggie salad is made with five different fresh veggies and zesty salad dressing made with apple cider vinegar and fresh lemon juice.
This salad is the epitome of fresh, whole foods! If you leave the feta cheese off, it’s also Whole30 compliant and vegan! The fiber, minerals, and nutrients in the veggies are just waiting to give your health a boost.
Summer Vegetables
The types of veggies that are in-season depends on where you live. But in most places, summertime is the best time to get fresh cucumbers, tomatoes, green beans, bell peppers, summer squash (like zucchini and yellow squash), and turnips.

If you follow this recipe exactly as it’s written, you’ll eat about 5 grams net carbs in each serving.
If you make any ingredient swaps or changes, you’ll have to recalculate how many carbs are in each serving.
Some vegetables – like cauliflower – are low in carbs. And then others – like carrots – are higher in carbs.
Best Vegetables For Salad
For this salad, I included zucchini, yellow squash, red onion, Roma tomatoes, and orange bell peppers. If you have some garden-fresh cucumbers, then add them!

Some people also grow spinach in their garden. Throw some of that in the salad too – it will taste incredible!
You might notice that I didn’t tell you to cook the zucchini or yellow squash.
Can you eat raw zucchini? Yes, you sure can!
It is deliciously crunchy. In fact, this is one of my favorite ways to eat zucchini but if you prefer to eat it cooked, then grill it first and add it to your salad.
Keto Summer Salad
Summertime is such an easy time to eat healthy! Just like my Keto No Pasta Pasta salad, this vegetable salad is the perfect one to make ahead of time.

Store it in the refrigerator in an airtight container and eat it within three days. It’s so refreshing – especially on hot days!
Plus, when you make salads ahead of time and do your meal prep, you don’t have to waste time or energy trying to figure out what to eat (and whether it will keep you in ketosis).
You might notice that there isn’t any meat in this vegetable salad. That’s on purpose, because I wanted to make a salad that you can serve with your favorite entree.
If you want to add meat, I suggest mixing in some chopped pepperoni and salami.
What To Eat With Salad
Since this salad is full of veggies, it’s the perfect side dish for every lunch or dinner entree you make! The lemon vinegar dressing will taste delicious with a serving of low-carb honey mustard kielbasa chicken and green beans.
