Five days till the first day of school! Where did the summer go?! To be honest, I’m more in shock about how fast the summer went by than sad that it’s gone because this is my favorite time of the year! This will be the first year that I’m not going to have to do morning or afternoon drop offs so I’ll have a little extra time to whip up some waffle tacos. You may have already noticed that we love Taco Tuesday (last time we incorporated them into a lasagna), but often times it gets so busy that we end up buying takeout.
A nice alternative that we’ll be having this year is Taco Tuesday for breakfast (see a yummy homestyle Eggo® we bought and stocked on up at Target as a taco below). Mixing the most important meal of the day with the touch of a beloved taco to fuel my kids sounds like the perfect combo to me! Since the kids will all be leaving for school at the same time this year, I think it’s the perfect opportunity to squeeze in some time together. With a large family, there’s lots of fun stuff to do, but often times sitting down for a family dinner just isn’t a reality and the next best thing is breakfast!

Eggo® Taco’s
What you’ll need:
Easy to make Homestyle Eggo®
Toothpicks
Taco stand for easy serving
Eggs
Salt and pepper
Tomatoes
Green onions
How To:
Preheat oven to 350ºF.
Scramble up some eggs.
Toast Eggo® on low and then poke a toothpick into the Eggo®, place on pan and bake for 5-6 minutes.
Remove from oven and fill Eggo® waffles with the scrambled eggs.
Top waffle taco with cheese, tomatoes and green onions.
With some waffle tacos filling their bellies, a few Crayola Crayons and an activity booklet, their mind and body will be fueled for school!
