Feeding a family of seven can be pretty expensive, I’ve never really been the type to like to cook large meals or plan ahead, but after I had Joseph I knew something had to change because I could no longer just wing it. Between working at home, taking care of the baby and four grown boys I needed a plan. For the most part I stick to very simple meal plans and while that works it can become a little boring and on those days I try to get creative and make stuff that can be used in more than one meal. Last month I bought a bag of Bear Creek Chili (you can find it here), it was a total I’m hungry impulse buy but it has proven to be one the best things I’ve bought on a whim. Two Quick Meals Using Bear Creek Chili
All you do is a add some water and tomato paste and voila! I like to eat it as is but I knew my boys wouldn’t so I decided to make a huge pot and on Friday night we had what my husband calls his “super nachos” which is layers of tortilla chips, chili, shredded lettuce and jalapeño all topped with cheese, its delicious! Two Quick Meals Using Bear Creek Chili
Super Nacho Ingredients:
1/2 lb. lean ground beef
1/2 cup chunky salsa *we use
6 cups tortilla chips
1 cup mexican shredded four cheese
Add 1/4 cup chopped onions
Chop 1/4 cup of tomatoes
Slice 1/4 cup of jalapeño peppers
1 cup of shredded lettuce
1/2 cup of Bear Creek Chili
Instructions:
Follow Bear Creek Chili cooking instructions.
Brown meat in skillet; drain and mix into chili.
Arrange chips on large plate; top with chili and cheese.
Top with remaining ingredients.
Super easy right? Now, place your super nachos in the oven for 2-3 minutes or until cheese is melted. With the left over chili I decided to make the kids cincinnati spaghetti. All I did was pour the chili over a plate of spaghetti and topped with the left over cheese. One bag under four bucks and I got two meals out of it. Not bad at all! It takes some of the what am I going to cook pressure off of me and I got two quick meals using Bear Creek for the boys.
