I took everything I loved about keto Caprese chicken and turned it into a casserole that you can use in your meal prep or to feed your entire family.
If you’re going to use it in your meal prep, store it in an airtight food storage container and keep it in the refrigerator for up to three days.
Keto Caprese Chicken
The biggest difference between this casserole and classic Caprese chicken is that this casserole doesn’t have any balsamic vinegar and it has a pesto-mayo dressing that enhances the flavors of the chicken and fresh basil.
Since traditional Caprese chicken doesn’t have balsamic vinegar, my casserole is pretty close to the original. This is a wonderful way to use leftover cooked chicken in a brand new way.
Chicken Caprese Casserole
There are only 4 grams net carbs in each serving! You’ll love how the pesto combines with tomatoes and mozzarella cheese. Trust me – splurge a little and chop up fresh mozzarella. It has a lighter flavor that lets you really taste the pesto and fresh basil.
I used cherry tomatoes, but you can use any type of tomatoes that you want. Grape tomatoes or even chopped Roma tomatoes in this recipe, as long as you use one cup.
What To Eat With Caprese Chicken
This is a very filling and tasty chicken casserole. You don’t need a lot of side dishes to go along with it.

Pesto sauce
Mayonnaise
Plain Greek yogurt
Cherry tomatoes
Mozzarella cheese shredded
Parmesan cheese grated
Fresh basil

Instructions:
Preheat the oven to 375 degrees.
Mix together the chicken, pesto, mayonnaise, yogurt, ½ of the parmesan cheese and salt and pepper to taste.
Spread the mixture into a casserole dish.
Top with the mozzarella and cherry tomatoes.
Sprinkle with the remaining parmesan cheese.
Bake for 25 minutes.
Garnish with fresh chopped basil before serving.

- 1/3 cup Plain Greek Yogurt
- 1 cup Cherry Tomatoes halved

- 1/2 cup Parmesan Cheese grated
