Both shrimp and cucumber are extremely versatile and go with almost anything. So, why not put them together? Turns out, it’s a perfect match!
The crispy cucumber is perfect with the tender, juicy shrimp and they both taste amazing with creamy herb dressing. If you keep cooked shrimp in your refrigerator, you can throw this easy lunch together in mere minutes.
This is the perfect way to use garden-fresh cucumbers. I used an English cucumber because I prefer the mild flavor it has.
Any variety of cucumber will taste delicious (especially after smothering it with the lemony dressing).
Lemon Herb Shrimp
Cucumber is a really versatile vegetable. I’ve made salads with cucumbers and cauliflower rice, cucumber and strawberry, and of course cucumber and tomato.
So, why not make a cucumber and shrimp salad? It’s perfect!
Shrimp tastes amazing with lemon and herbs, so this is the perfect salad recipe. Remember to use fresh herbs for the best flavor and aroma.
The parsley and dill will look – and taste – amazing together. And use juice from a fresh lemon, too!
You only need one tablespoon, so cut the lemon in half and safe the other half to add to your water for a refreshing drink!
Creamy Cucumber Salad
This is a fun twist on the classic keto creamy cucumber salad. In that recipe, I mixed together thinly sliced cucumbers with radishes and the dressing was a combination of mayo and sour cream.
In this shrimp and cucumber salad, I used mayonnaise with Greek yogurt. I love how rich and tangy the Greek yogurt is.
Plus, the yogurt gives the salad a protein boost. I also added some finely chopped red onion to give the salad a bit of a bite.
If you’re sensitive to the flavor of red onions, then either use white onions or rinse the red onion before adding it to the salad.
Quick Lunch Sides
This shrimp and cucumber salad is a perfect lunch. It’s high in protein and fiber.
You will feel full without feeling tired or stuffed and you don’t really have to eat anything else with it. But for something sweet, make a keto strawberry smoothie.
If you need more protein, then either keto salami tacos or keto Reuben roll-ups are both fantastic ideas. They are just as quick and easy, too.
How To Store Sliced Cucumber
If you want to add this salad to your meal prep, then I suggest making it without the red onion. As it sits in the refrigerator the aroma and flavor of the red onion will take over the salad and make it almost overpowering.
In fact, the best way to store this salad is to keep the salad and dressing in separate containers. Then, add the dressing right before you eat.
Keep everything in an airtight container and use them within three days.
