These easy eclair cookies are the perfect treat to bring to a party! A delicious creamy filling, with chocolate and a fresh cherry on top!
Just because my diet is mainly low carb doesn’t mean I don’t enjoy the occasional treat! I enjoy making low carb treats like these Keto fat bombs and for guest I’ve made this no bake lemon cheesecake dip. One thing is for sure: I love easy no bake recipes!
These bite size cookie eclairs take minutes to whip up and don’t require me to use the oven! A big win win for me! They have all the flavors of a classic eclair but instead of the pastry I chose to use cookies. Delicious either way if you ask me!
It’s already starting to get warm down here in Florida and not having to use the oven to make delicious treats like these is a must for me! I make these cookie eclairs when we have guest over and the kids love helping me make them!

All you need to make these eclair cookies is milk, instant pudding, vanilla wafer cookies, melting chocolate and cherries (or sprinkles). I decided to add a fresh cherry on top to give the cookie eclair a pretty pop of color but they ended being the yummiest addition!
Easy Eclair Cookies
Ingredients:
1 box of your favorite vanilla wafers
Box of instant pudding
Melting chocolate
Cherries or sprinkles
4 oz cream cheese
Instructions:
Make your pudding according to instructions. **Optional: add 4 oz of softened cream cheese to pudding mix for a thicker, richer mixture.
Add a layer of pudding mixture to one cookie and set aside.
Dip a cookie into the chocolate and place on top.
Top with cherry and refrigerate until chocolate has hardened.

- 1 Box favorite vanilla wafers
- 1 Pkg Instant Pudding Mix
- 2 Cups Milk
- 1/2 Cup Melting chocolate
- 30-40 Cherries
Instructions
