This Cajun chicken salad uses cottage cheese instead of mayonnaise. It’s packed with flavor and crunchy textures, making it a fun and healthy lunch.

I’ve made keto Cajun chicken and shrimp soup, creamy keto skillet Cajun cod, and even some crispy keto Cajun air fryer chicken strips. 

And this Cajun chicken salad is no different. It’s spiced with Cajun seasoning, garlic powder, and paprika.

I also mixed in some red onion and bell pepper to give it more flavor and crunchy textures. This is a chicken salad for anyone who is bored with chicken salad. 

Keto Spicy Chicken Salad 

Honestly, this chicken salad is as spicy as you want it to be. If you’re craving more heat, add some chopped jalapeno or as much hot sauce as you like.

Keto Cottage Cheese Cajun Chicken Salad

If you want it milder, add only one teaspoon of Cajun seasoning. 

Another way to control the flavors is to use different types of vegetables. Red onion is the most pungent one with the strongest aroma and flavor. 

If you use white or yellow onion, it will have a milder flavor. If you like red onion, rinse your diced onion with water to make it milder. 

Cottage Cheese Chicken Salad 

Using cottage cheese instead of mayonnaise has a lot of benefits for this chicken salad. It adds important nutrients that mayo doesn’t have – calcium, vitamin D, and protein.

It also allows all the other ingredients stand out because cottage cheese has a muted flavor. I used shredded chicken for this recipe.

It’s the perfect way to use leftover chicken that you cooked earlier in the week. You can also use canned chicken or shred a rotisserie chicken. 

What To Eat With Chicken Salad 

Cajun chicken salad is perfect to eat when you’re craving something savory and spicy. Eat it with a fork, serve it on top of a large piece of lettuce, or make some keto cloud bread and eat it like a sandwich.

For a sweet side dish, make keto strawberry cucumber salad on the side. It’s a fantastic way to prepare garden-fresh strawberries.

Then, pour yourself a jar of keto sweet tea. Lunch is served!

After you mix all the ingredients together, store the chicken salad in the refrigerator for up to three days. I like to store it in a mason jar for my meal prep.

Directions:

Place the cottage cheese, garlic powder, cajun seasoning and paprika into a food processor, and blend until smooth.

  • 3 cups Shredded Chicken
  • 1/2 cup Cottage Cheese
  • 1/4 Red Onion diced
  • 1 Red Bell Pepper chopped
  • 1/2 cup Celery chopped
  • 1/2 tsp Garlic Powder
  • 2 tsp Cajun Seasoning
  • 1 tsp Paprika

Instructions
 

  • Place the cottage cheese, garlic powder, cajun seasoning and paprika into a food processor, and blend until smooth.
