This quick and easy casserole recipe is that it can be prepped and made ahead of time! You can assemble the casserole, let it cool down, wrap it, and then freeze it. When you’re ready to eat, simply thaw your casserole overnight in the fridge and bake it till warm the next day!

How to make Buffalo Chicken Casserole
Preheat oven to 350 degrees Fahrenheit.
Shred the chicken and add to a large bowl.
Add softened cream cheese and buffalo sauce to bowl and mix.
Make the cauliflower rice according to package instructions and add to skillet.
Layer it with buffalo chicken mixture.
Top with shredded cheddar cheese and bake for 20-30 minutes or until cheese is melted.
Drizzle with more hot sauce and sprinkle with fresh parsley.
Optional: Top with bacon or blue cheese!

- 10 ounces shredded cheddar cheese
