Keto Caesar Dressing
There are two things that I fell in love with when I made this recipe – the keto croutons and the tangy dressing. And after one bite, you’ll agree too!
I’ll talk a bit more about the surprisingly low-carb croutons a bit later on. First, let’s give some love to the zesty Caesar dressing.
In order to keep it as true to the original, classic recipe, I used anchovy paste. If you’re not a fan of anchovies, don’t worry!
I only added 1/2 a teaspoon, and it basically adds essential brininess. In fact, it’s so salty that you probably won’t have to add more salt to it.
I also suggest using fresh lemon. It’s slightly sweet and has the brightest flavors.
Make a bunch of this dressing! You can use it as a dip for keto chicken nuggets, veggies, or as a sauce for wraps or burgers.

Since it’s used so often, it’s easy to get tired of it, too. But fight that veggie fatigue by smothering it in a delicious dressing and adding some crunchy low-carb croutons.
Yes! Keto-friendly croutons! Who knew? My recipe has the instructions for making them yourself. All you need to do is chop up some low-carb bread into cubes.
Then, drizzle some olive oil on top and season with salt and pepper. Add the bread to the air fryer basket in a single layer and air fry at 400F for about 10 minutes.
Caesar Broccoli Salad
The combination of croutons, broccoli, chopped romaine lettuce, and shaved parmesan cheese work together perfectly to make it taste like an authentic Caesar salad! To make it easier to eat, I suggest chopping the broccoli florets into tiny pieces.
And don’t forget to use shaved parmesan cheese. For the best flavor, splurge a little and buy real parmesan cheese from the fancy cheese section at the grocery store. Shred it at home.
The nuttiness will be more pronounced when you do it this way.
What To Eat With Salad
Since this is a creamy salad, I suggest serving it with something lighter. For the main course, keto pan seared chicken thighs are the perfect fit.
Serve this salad keto creamy ham and cheese roll-ups or keto Reuben roll-ups.
Salad Meal Prep
This easy Caesar broccoli salad will stay fresh in your weekly meal prep, but you should eat it sooner to taste the best. Leftovers can be stored in an airtight container in the refrigerator for up to three days.
Make a bunch of the Caesar dressing and store it separately from the salad. Keep the dressing in a spillproof and airtight container.
Keep it refrigerated and use it within two weeks.

Directions
To make the keto croutons, chop up the keto bread into cubes. Add olive oil, salt, and pepper, garlic powder, and basil and mix well.
Air fry them at 400F for about 10 minutes. Set them aside.
Lightly steam the broccoli until it is a crisp tender. Run immediately under cold water and strain well.
Add the broccoli and romaine to a mixing bowl.
In a small bowl, whisk together the dressing ingredients.
Pour the dressing over the salad mixture, and toss to combine well.
Toss in the shaved parmesan and croutons before serving.
