Copycat Cheesecake Factory Chopped Salad
Bursting with fresh colors, the Cheesecake Factory chopped salad used to be one of my favorite salads to order at a restaurant. You just can’t beat the crispy lettuce, tomatoes, cheese, avocado, and those croutons!
Well, I missed it so much that I made a low-carb copycat! It tastes just like the salad from the restaurant. It still has avocado, grilled chicken, Roma tomatoes, and bacon. But I changed the salad dressing so it’s low-carb.
One serving of this salad only has 3 grams net carbs.
Keto Cheesecake Factory Salad
Save this recipe so you can remake the salad dressing. It’s one of my favorite vinaigrette dressings of all time. It’s slightly sweet with robust Italian flavors mixed in. You can kick up the flavors with some red pepper flakes, or leave it as it is.
In fact, double the salad dressing and store it in a mason jar in your refrigerator. It will stay fresh for up to a month. You’ll just have to give it a little shake to mix the ingredients together before you use it.
Easy Chopped Salad
The salad itself is pretty basic, so it gives you a lot of room for customizing it. Here are some of my favorite ingredient swaps that you can make in my chopped salad.
- Lettuce: Add some kale and baby spinach to add more crunch.
- Roma Tomatoes: Cherry tomatoes are a good substitute. Grape tomatoes have too much juice.
- Blue Cheese: Use crumbled Goat Cheese instead.
- Grilled Chicken: Shredded rotisserie chicken, canned chicken, or cubed pork chops will taste delicious.
How Long Does Salad Stay Fresh
Salad will stay fresh in your refrigerator for up to three days. I suggest eating this as soon as you mix the ingredients together. That way, the lettuce won’t get wet from the tomatoes and eggs. Everything will taste better when you make this fresh.
If you want to add this salad to your meal prep, I suggest storing everything in separate containers. Then, add everything to a large mixing bowl right before you eat it.
What To Eat With Salad
Since I added grilled chicken and avocado to the salad, this is a very filing lunch.
If you want to eat something with it, I suggest enjoying a cup of soup, like keto turmeric zucchini soup, low-carb dill pickle soup with bacon, or keto french onion soup.
If you prefer to eat sandwiches with your salad, then make some roll-ups instead of using bread. My favorites are keto club sandwich roll ups, keto philly cheesesteak roll ups, and keto sausage and spinach roll-ups.
