You know those days when you want to stay on track, but you just don’t have time for another complicated recipe? These simple rollups are perfect for those days!
Made with just six simple ingredients, you can whip these together in less than 30 minutes! Plus, they are made with ingredients you probably already have in your fridge.
They are a high-fat snack or lunch that will fill you up and keep you feeling full until dinner.
Sausage Spinach Roll-Ups
With just 3 grams net carbs each, this is the perfect lunch! It leaves you with enough carbs left over for some snacks or a big dinner that night.
They are also the perfect thing to serve at parties. No one will be able to tell that they are keto or low-carb (and they are the perfect appetizer to serve if anyone in your party can’t eat gluten).
If you want to keep them mild, I suggest using mild Italian sausage. But if you want to give the roll-ups a bit of a kick, use some hot sausage or add some red pepper flakes to the mix!
Keto Spinach Recipe
For the best flavor, I suggest using fresh spinach, not canned or frozen. It will turn out tasting (and looking) so much better.
I like to eat them for a snack or even as my lunch. If you want to enjoy a bunch of different flavors with these tasty roll-ups, make a bowl of keto turmeric zucchini soup with it. The turmeric flavors are really powerful and support a healthy immune system.
Or chop up and make some keto Vietnamese chicken salad. This salad looks as good as it tastes – and it’s the perfect thing to eat with these mild roll-ups.
Spinach Dip Rollups
If you want to make them ahead of time or add them to your weekly meal prep, I suggest eating them within a day or so. The cheese wraps are nice and crispy when you eat them fresh. The longer they set in the refigerator, the softer they will become.
Store your roll-ups in an airtight container and keep them refrigerated for up to three days.
Cheese Wraps
For these wraps, I used shredded mozzarella cheese to make the cheese wraps. But I’ve used cheddar cheese to make other cheese wraps.

Keto Sausage and Spinach Roll-Ups Recipe
Here’s the list of ingredients to make these delicious keto sausage and spinach roll-ups. Exact measurements and instructions are located for both are located in the printable recipe card at the bottom of this post.

Ingredients:
Shredded mozzarella cheese
Ground Italian sausage
Onion
Cream cheese
Fresh spinach
Minced garlic
Instructions:
Preheat the oven to 400 degrees, and line a large baking sheet with parchment paper.

Form the mozzarella cheese into 8 evenly sized circles on the baking sheet. Be sure to leave a space between each cheese circle, as they will expand a bit when baking.
Add the ground sausage to a skillet over medium high heat, and saute until browned completely. Drain the excess fat.
Return the skillet to medium heat, and stir in the onion and garlic.
Saute until the onion softens.
Stir in the cream cheese until melted.
Add in the spinach, and saute until wilted. Remove from the heat and allow to cool.
Place the cheese into the oven, and bake for 8 minutes, or until the edges start to brown.
Remove the cheese from the oven and let cool for a few minutes.
While the cheese is still hot, but able to be handled, place a layer of the filling in the center of each cheese circle.
Fold the cheese up around the filling to form rollups.
Let the rollups slightly cool and become crispy before serving.
