Imagine all the flavors of your favorite cheeseburger. The ground beef, the cheese, and the pickles and onions…now imagine if all of that is wrapped in a portable tortilla that you can take with you on the go.
Oh, and the best part? It’s low-carb!
These keto cheesy beef roll-ups only have 2 grams net carbs in each one! This easy recipe is the perfect thing to make when you’re tempted to go to the drive through.
You’ll have all the same flavors and texture, but a fraction of the carbs (and grease). Plus, you can make them as savory, sweet, or spicy as you like!

Keto Beef Roll Ups
I used ground beef to make these roll-ups. It’s the same meat that you use in burgers, so it has a very similar flavor profile.
If you want to elevate the flavor, then use ground steak. Most meat market counters will grind steak if you ask.
What other types of ground meat could you use? Try mixing half ground beef with half ground sausage.
Ground chicken or ground turkey could work, too but they are so low in fat that they have a muted flavor. So you might have to add more spices or cheese.
Cheeseburger Roll Ups
What are your favorite cheeseburger toppings? There are ways that we can incorporate them into these easy cheeseburger roll-ups.
I flavored the ground beef with sugar-free ketchup, mustard, cheese, and two types of cheese. Then, I topped them with pickles and bacon.
If you want to mix things up, here are some ideas, just off the top of my head. Add some heat by mixing diced jalapenos in with the ground beef.
Make a BBQ Bacon burger by drizzling bacon and sugar-free BBQ sauce on top of the roll-ups. You could also use shredded Swiss cheese and mix in some diced mushrooms.
Cheesy Beef Tortillas
I used two types of cheese in the ground beef mixture and then topped the roll-ups with even more cheese! For the ground beef, I used shredded cheddar cheese and cream cheese.
You could use ricotta cheese instead of cream cheese and any flavor or hard cheese for the shredded cheese.
For the topping, I used low-carb cheese sauce. You can make your own with cheese and milk and melting them together on the stove but I find it easier to buy a can or jar!
Remember to read the label so you get low-carb versions.
This is the perfect lunch or easy dinner. Serve them with some Keto guacamole deviled eggs or keep the pickles theme and make some crunchy Keto fried pickles with cheese.
They are a zesty way to replace French fries. Or you can make a quick bowl of keto broccoli cheese soup.
Easy Ground Beef Recipe
Make these ahead and add them to your weekly meal prep. Make a batch of them and store them in an airtight food storage container.
Keep them in the refrigerator and eat them within three days.
Store them without the cheese sauce on top. Keep that in a separate container.
Then, reheat them in a skillet or an air fryer. Don’t use the microwave because it will make the tortillas way too soft. And the crispy tortillas are what I love about them!

Ingredients:
- Olive oil
- Ground beef
- Garlic powder
- Onion powder
- Salt and pepper to taste
- Sugar free ketchup
- Yellow mustard
- Cream cheese softened
- Shredded colby jack cheese
- Chopped pickles
- Bacon pieces
- Low carb cheese sauce
- Street taco sized zero carb tortillas
Instructions:
Add the ground beef to a skillet over medium high heat. Season the ground beef with the onion powder, garlic powder and salt and pepper to
taste. Saute until the meat is completely browned. Drain any excess grease.
Reduce the heat to medium low, and mix in the ketchup and mustard.
Add in the cream cheese, and stir until completely combined.
Mix in the shredded cheese, and stir to combine until melted. Turn the heat off. Heat the olive oil in another skillet over medium heat. Add a layer of the filling mixture to the center of each tortilla, and fold the tortilla closed around it.
Place the tortillas seam side down in the skillet to brown evenly on both sized until crispy.
Serve the beef rollups garnished with the pickle, bacon and cheese sauce.
