These peanut butter roll-ups taste like peanut butter cookie dough in a crispy tortilla. They remind me of a combination of a funnel cake, cannoli, and peanut butter pie. And with just 4 grams net carbs in each one, you can indulge guilt-free!
There are a lot of different ways to make them. I tried to share the simplest ingredients and steps that I could.

Chocolate Chip Peanut Butter Roll-Ups
These chocolate chip peanut butter roll-ups were slightly inspired by another low-carb dessert I made recently – Keto Air Fryer Chocolate Peanut Butter Bites. This time, instead of using really large tortillas and then slicing them into tiny bites, I used street taco tortillas.
If you wanted to, you could use larger tortillas and slices these into small pieces.
Both recipes use the air fryer to make them perfectly crispy. I love using the air fryer because it doesn’t use extra oil or grease.
Plus it works really fast! This recipe reminds me of a chocolate peanut butter sandwich – it’s so good!
While it has more carbs, you could replace the banana extract with a mashed up banana. Just make sure you add those carbs to your macros.
Low-Carb Peanut Butter Roll-Ups
I used natural, creamy peanut butter as the main ingredient but you can also use crunchy peanut butter. It will add a fun little crunch!
But if you are sensitive or allergic to peanuts, replace the peanut butter with your favorite kind of nut or seed butter. Try it with almond butter or (my favorite) sunflower seed butter.
It’s so easy to spread (and slightly sweet!).
Crispy Chocolate Chip Roll-Ups
There is one important step that takes a bit of time. I suggest chilling the roll-ups in the freezer before you cook them in the air fryer.
Let them chill in the freezer for about 30 minutes. The waiting is the hard part! It’s important to chill them first because it helps the filling become solid, and will make the tortillas get extra crispy in the air fryer.
If you think you’ll leave them in the freezer longer than 30 minutes, cover them with aluminum foil so they don’t taste funky.

Crispy Low-Carb Chocolate Chip Peanut Butter Roll-Ups Recipe

Ingredients:
- Zero carb street taco sized tortillas
- Cream cheese softened
- Natural peanut butter
- Keto chocolate chips
- Swerve confectioners sugar substitute
- Banana extract (can sub in one mashed banana)
Instructions:
Blend together the cream cheese, peanut butter, Swerve and banana extract until smooth and creamy.
Fold in the chocolate chips.
Place a layer of filling down the center of each tortilla, and roll the tortillas closed around the filling.
Layer the rollups on a baking sheet, and chill in the freezer for 30 minutes.
Add the roll ups to the basket of an air fryer, and cook at 400 degrees until browned and crispy.

- 6 Zero Carb Street Taco Tortillas
- 6 ounces Cream Cheese softened
- 1/3 cup Natural Peanut Butter
- 1/3 cup Keto Chocolate Chips
- 2 tbsp Swerve Confectioner's Sugar Substitute
- 1/2 tsp Banana Extract
Instructions
