Keto Bacon Roll Ups
Everything about these keto bacon roll-ups is amazing. First, you have the crispy cheese wrap that’s made from shredded mozzarella cheese.
Then, they are filled with a cream cheese and spinach combination that reminds me of spinach dip. But I made them even better by adding crispy bacon.
I love to munch on them when I’m feeling really hungry at lunch. The healthy fats in the cream cheese fill me up and keeps me feeling full until my next meal.
This recipe will make eight roll-ups, and there are 2 grams net carbs in each one. It’s perfect for lunch or a quick after-workout snack.
Bacon Cream Cheese Roll Ups
In order to get the most flavor in them, I used pork bacon. And then I sauteed the garlic in the bacon grease.
Unfortunately, this also means that there is some saturated fat and cholesterol in pork bacon. If you have to watch those numbers, I suggest using turkey bacon instead.
You can also use ricotta cheese instead of cream cheese in this recipe. Ricotta cheese has fewer calories, fat, and carbs than low-fat cream cheese.
So it might be a good idea to use ricotta cheese if you’re stuck in a weight loss plateau.
Keto Spinach Cream Cheese Roll Ups
If these roll-ups look familiar, it’s probably because I have another recipe that inspired them. My keto sausage and spinach roll-ups are basically the same exact recipe except for one thing – I used sausage instead of bacon.
Since they’re almost the same recipe, you can eat them with the same entrees or sides, too. Both types of roll-ups will taste perfect with a bowl of keto turmeric zucchini soup and if you want a salad, then make some keto Vietnamese chicken salad.
Cheese Wraps
One of the best things about this recipe is the easy cheese wraps recipe. All you do is place shredded mozzarella cheese in little round piles on a baking sheet.
As they bake, they will become one solid piece. And if you use them quick enough, they will be pliable, so you can fold them over and use them as a food wrap.
But if you cook them for too long or your wait too long to add the filling, the cheese wraps will turn into cheese crisps.
This is an easy way to make zero-carb chips, so don’t worry if you accidentally do it that way. You can still eat them!
How To Make Roll-Ups Ahead
Yes, you can make them ahead of time and then serve them at a party or eat them with your keto lunch. But I suggest serving or eating them within a day or two.
That way, the cheese wraps will still taste fresh. If they sit in the fridge for too long, the cheese wraps could get soggy from the cream cheese filling.
Store your roll-ups in an airtight container and keep them refrigerated for up to three days.

Ingredients:
- Shredded mozzarella cheese
- Cream cheese softened
- Bacon cooked and crumbled
- Raw spinach
- Bacon grease or olive oil
- Minced garlic
- Salt and pepper to taste
Instructions:
Heat the oven to 400 degrees. Arrange the mozzarella cheese into circles on a large parchment lined baking sheet.
Heat the bacon grease or olive oil in a skillet over medium heat. Stir in the spinach, and saute until wilted.
Mix together the cream cheese, bacon, spinach, garlic and salt and pepper to taste until well combined.
Bake the cheese in the oven for 8-10 minutes until the edges are browned and crispy. Remove the baking sheet, and let the cheese circles cool for 2 minutes.
Place a spoonful of filling down the center of each circle of cheese.
Carefully and quickly roll the cheese closed over the filling.
Allow the roll ups to cool and crisp up before serving.
