What Is Chicken Cacciatore
The word cacciatore means “hunter” in Italian. This dish is an old recipe traditionally made with items people picked or killed while out hunting. It’s usually made with braised chicken and lots of fresh garden vegetables and herbs.
I stayed as true to the original recipe as possible while keeping it keto-friendly. Tomatoes are high in natural sugars, so I limited how much tomato paste and fresh tomatoes I added.
What Is Chicken Cacciatore Served With
Since it has a thick tomato sauce, most people serve chicken cacciatore on top of either rice or mashed potatoes. There are low-carb options you can use instead of rice or potatoes. Serve this on top of your favorite cauliflower rice recipe.
If you prefer fluffy mashed potatoes, serve it on top of garlic cauliflower mash instead. Don’t forget to make some keto garlic knots on the side too. They are perfect for dipping into the savory tomato broth.
Keto Chicken Cacciatore
Even though I’ve seen recipes for slow cooker chicken cacciatore, I prefer to make it in a cast iron skillet. I love how the flavors infuse into each other, and the texture of the caramelized bits that rise to the surface as I deglaze the pan.
I used chicken thighs, but you could make this with chicken breasts too. The chicken thighs are juicier and don’t dry out as much. No matter which cut of chicken you use, make sure it is fully cooked. Chicken should reach an internal temperature of 165F.

There are 2 grams net carbs in each 3.5-ounce serving. For that reason, you should limit how many capers you add to this recipe. I used 2 tablespoons in the entire meal.
Capers have an irresistible aroma and flavor. They are actually edible flower buds that grow on perennials in the Meditteranean. You’ll find them as a frequent ingredient in lots of Greek and Italian recipes.
They are tangy with a slight lemon undertone. If you want to add flavor to a dish, just add a few capers. A little bit goes a long way!
Easy Chicken Cacciatore
This chicken cacciatore recipe only takes about 30 minutes to make. Make extra and keep it in your weekly meal prep. To save yourself more time, you could pick up a rotisserie chicken and add it to your skillet after you make the sauce.
It will stay fresh in the refrigerator for up to three days.

Boneless skinless chicken thighs
Olive oil
Onion
Sliced mushrooms
Minced garlic
Can Italian diced tomatoes undrained
Chicken broth
Tomato paste
Italian seasoning
Salt and pepper
Capers
Red pepper flakes to taste (optional)
Instructions:
Heat the oil in a skillet over medium high heat.
Season the chicken with salt and pepper to taste.
Add the chicken to the skillet, and cook for about 5 minutes on each side. Remove, and set aside.
Pour all but 1 tablespoon of the drippings from the skillet.
Add the onion to the skillet, and saute until beginning to soften.
Stir in the mushrooms, and saute until softened.
Mix in the garlic, Italian seasoning, red pepper flakes if you are using and tomato paste, stirring to combine for 30 seconds.
Deglaze the skillet with the white cooking wine.
Pour the diced tomatoes into the skillet, and stir to combine well.
Mix in the capers, and add the chicken back to the skillet.
Simmer until the chicken is fully cooked through.

- 2 tbsp Olive Oil
- 1/2 Onion chopped
- 8 ounces Mushrooms sliced
- 2 tsp Minced Garlic
- 14.5 ounces Can Italian Diced Tomatoes undrained

- 1 tbsp Tomato Paste
