No Pasta Pasta Salad
You know that pasta salad that shows up to every BBQ, potluck, and picnic? It usually has rotini pasta, cured meat, cheese, and lots of Italian dressing on it.
Well, this recipe has all the goodness of that original pasta salad, but without the pasta. And when you take away the pasta, you’re left with all the best ingredients.
There are only 5 grams net carbs in each serving! This entire recipe makes six hearty servings, so you’ll have plenty left over for your weekly meal prep.
Just like all other salad recipes, this one is incredibly easy to customize. Keep reading and I’ll share some ingredient swaps you can make, as well as what to eat with it and how to add it to your meal prep.
Keto Pasta Salad
First, let’s talk about your meal prep. Yes, you can just place all of it in an airtight container and keep it in the refrigerator.
Just realize that some of the cured meats might get a little soft as they sit and soak up the liquid from the salad dressing. This doesn’t bother everyone, so it might not bother you.
If you want to keep all the ingredients as fresh as possible, then I suggest storing the salad ingredients separately from the dressing ingredients. This way, all you have to do is mix it up and you’re ready to eat!
The salad ingredients will last about a week and the dressing will last 2-3 weeks in the refrigerator.
Pasta Salad Without Pasta
This is a versatile salad that goes with any entree you make, but I prefer to eat it with beef-centered recipes. If you’re grilling some Keto Sweet and Sour Meatball Kebabs, then add this salad to the side.
It’s also perfect with Keto Patty Melts and some Keto Cottage Cheese Flatbread. But watch your carbs because the patty melts are higher in carbs than the meatball kabobs.

Antipasto Salad
The word antipasto literally means “before the meal.” It describes appetizers that are usually made with cured meats, cheeses, olives, and vegetables.
Wouldn’t you know, that’s exactly what I used in this salad! So you really could call this an antipasto salad!
I used two types of cured meats, fresh mozzarella, and four types of veggies in this tangy and earthy salad. But I think the best part about it is the homemade red wine vinaigrette.
I combined olive oil, red wine vinegar, garlic, Italian seasoning, and sugar-free honey. Give it a good mix and you have the best-tasting keto-friendly salad dressing ever!
What Can You Use Instead Of Pasta in Pasta Salad
My favorite way to replace pasta is to just not use it at all. You don’t even miss it in this meat, cheese, and veggie salad!
If you really want to add some kind of pasta, you can use zucchini noodles or Palmini noodles instead.
There are a few other ingredient swaps you can make, too. Swap the cured meat for any type of deli meat that you want.
Try it with some bacon, too! Instead of Pepperoncini peppers, add jalapeno peppers. And you can chop up any type of tomatoes that you want.

- Deli sliced pepperoni chopped
- Deli sliced salami chopped
- Mozzarella pearls
- Pepperonicini peppers chopped
- Cherry tomatoes halved
- Artichoke hearts chopped
- Kalamata olives chopped
- Olive oil
- Red wine vinegar
- Minced garlic
- Italian seasoning
- Sugar free honey
Instructions:
In a large mixing bowl, stir together the pepperoni, salami, mozzarella, pepperoncini peppers, tomatoes, artichoke hearts and olives until well combined.
Whisk together the olive oil, vinegar, minced garlic, Italian seasoning, sugar free honey and salt and pepper to taste in a bowl until well combined. Pour the dressing mixture over the ingredients in the mixing bowl, and toss to coat well before serving.

- 8 ounces Mozzarella Pearls
- 3 ounces Pepperoncini Peppers chopped
- 1 cup Cherry Tomatoes halved
- 10 ouces Artichoke Hearts chopped
- 1/4 cup Kalamata Olives chopped
- 3 tbsp Olive Oil
- 1 1/2 tbsp Red Wine Vinegar
- 1 tsp Minced Garlic
