Nutritious and sweet, keto frozen yogurt bark is a fruity dessert that you’ll want to serve at parties or eat to cool off in the summer.
Frozen Yogurt Bark
My kids have a favorite summertime treat that I’ve made them for years – sweet frozen yogurt bark. The original recipe is sweetened with real honey, so it’s a no-go for keto.
I remember how delicious this frozen yogurt bark is, so I created a keto-friendly recipe that I can eat and stay in ketosis! I didn’t have to change much to make it keto-friendly, either.
There are 5 grams net carbs in each serving, and this recipe makes six servings. If you want to cut the carbs down even more, I suggest using fewer fruit pieces and a little fewer sliced almonds.
Fruit Yogurt Bark
One of the easiest ways to change this recipe is to use your favorite types of keto-friendly fruit. Berries have the least amount of carbs, so they are the best ones to use.
Strawberries, blueberries, and raspberries are very low in carbs. Of all of them, blueberries have the least amount of carbs, so use them the most.
I kept the fruit whole because they decorated the bark beautifully – and whole fruit has more fiber, which is fantastic for your gut health. If you want to color the bark naturally, puree your favorite fruit and make colorful bark!
Keto Bark Recipe
This low-carb yogurt bark is made with simple, whole ingredients that are easy to find. It’s best to use Greek yogurt, since it’s thicker, creamier, and higher in protein. Read the labels and make sure you buy plain, unsweetened yogurt.
My favorite sugar-free honey is from Wholesome Yum. It has the closest flavor to real honey and doesn’t have any funky aftertaste.
Store your frozen yogurt bark in the freezer for up to six months. It will melt, so only take out as many pieces as you think you’ll eat.
Patriotic Dessert
The white bark topped with red strawberries and blueberries make a stunning dessert to serve at patriotic cookouts like Memorial Day, Veteran’s Day, July 4th, or Labor Day.
Serve this bark with my red, white, and blue mascarpone mousse. They look extra festive and fun together.
Keto Fruit Dessert
Fruit is ok to eat on the keto diet in moderation. I’ve made a lot of recipes with fruit. Even on keto, I have a sweet tooth, and fruit is a healthy way to satisfy that craving.
Another favorite fruit dessert is Keto Strawberry Cheesecake Popsicles. My kids love them too, and they don’t know they are low in sugar (which is good for them).
Serve this bark with some keto raspberry swirl cake bars. All the fruit tastes so good together!
