Red velvet cookies just look like Christmas, don’t they? I love that dark red color, especially when I set them out next to the dark green Christmas tree. These cookies are the perfect things to set out for Santa (especially if Santa is on the keto diet!).

Almond Flour Red Velvet Cookies
I just love the consistency of almond flour cookies. They are soft and chewy without being too dry or too soft. I’m not the only one in my family the loves them. In fact, these are the perfect cookies to make when you want to make memories baking together as a family. Grab the camera and snap pictures, these moments don’t last very long!

Easy To Make Red Velvet Cookies
When I say the family can bake them together, I mean it. They literally take 10 minutes of prep time. Since they are no-bake cookies, there is no baking time! Just let them set and then munch on them. They are so good!
Here’s what I used in my keto red velvet cookies. All the exact ingredients are in the printable recipe card at the bottom of this post.
- Almond Flour – use ultra-fine almond flour, not almond meal. The almond meal might have bits of the nut’s skins mixed in which will give the cookies a sandy or grainy texture.
- Coconut Flakes – make sure they are unsweetened
- Almond Butter – use either creamy or crunchy. For soft and smooth cookies, I suggest creamy.
- Swerve Confectioner’s Sugar Substitute – Granular sugar won’t work as well, it must be confectioner’s sugar substitute.
- Vanilla extract
- Almond milk – Use unsweetened almond milk. You can use unsweetened vanilla, but it will alter the taste of the cookies a little bit.
- Beet root powder – This is what makes the cookies look dark red.
- Unsweetened cocoa powder – The cocoa powder gives it the classic red velvet flavor.
Healthy Red Velvet Cookies
These are definitely kid-friendly cookies. You’ll want to make sure you make a large-enough batch for everyone to share.

They also make a great food gift. Serve them on a decorative tray with some of your favorite cookies. It’s one of my favorite Christmas traditions.
Since these are a no-bake recipe, you’ll want to keep them in the refrigerator if you have any leftovers. Store them in an airtight container and they will last about a week.
Red Velvet Recipe Ideas
There are lots of different ways you can mix things up with these simple cookies. Rolls the dough out and use a cookie cutter. Cut out festive shapes. This works for any holiday or occasion.

Another thing that would taste amazing in them would be some sugar-free chocolate chips.

After the red velvet cookies are done chilling in the freezer, sprinkle some more powdered sugar substitute on top. This gives them the appearance of being dusted with snow!

Instructions:
Place all of the ingredients for the cookies into a mixing bowl.

Beat on high with a dough hook until it forms a loose dough that clumps when you squeeze it in your hand.

Form the dough into 12 even sized balls, and flatten with the palms of your hands into cookie shapes.

Place the cookies onto a parchment or silicone mat lined baking sheet and put into the freezer to chill for an hour before serving.
