Keto Gingerbread Loaf 

What is a gingerbread loaf? Starbucks made this sweet bread really popular in 2019 and people have been chatting on message boards and social media ever since it was discontinued. 

Keto Starbucks Gingerbread Loaf

It’s basically a sweet bread made with the bold spice of ginger and the caramelized sweetness of brown sugar and cinnamon. 

Then, it’s all topped with a sweet vanilla glaze. It tastes so good with your favorite latte! But not only is it tough to find at Starbucks (will they bring back gingerbread loaf? We don’t know!), it’s also not a keto-friendly snack. 

So, I made a low-carb version and it tastes even better than I remember the Starbucks version tasting! 

Copycat Starbucks Gingerbread Loaf 

There are some obvious differences between my homemade keto gingerbread loaf and the Starbucks version. But I think the best change was to the frosting. 

Keto Starbucks Gingerbread Loaf

Every bite of my copycat Starbucks gingerbread loaf tastes like the holidays! Turn on your favorite Christmas songs, turn on a cheesy movie, and enjoy the season without leaving your house. 

One of my favorite things about this recipe is that it tastes just like a gingerbread sweet bread but doesn’t have molasses in it! This moist gingerbread loaf recipe will become one of your favorite holiday desserts to make and eat for breakfast. 

How To Store Gingerbread Loaf 

This is the perfect bread to make ahead and store in your freezer. If you want to freeze it, I suggest freezing the bread without the frosting. It will be so much easier.

This way, you just have to wrap the bread in plastic wrap, put it in a freezer bag, and keep it in the freezer for up to six months. 

Place the bread on a baking tray if you want to freeze it with the frosting on. Put the baking tray in the freezer. Once the bread is completely frozen, wrap it in plastic or aluminum foil and put it in a freezer bag. 

Store leftovers in an airtight container in the refrigerator for up to three days.

The flavors in this sweet bread just scream Christmas! You just can’t go wrong with ginger, cinnamon, nutmeg, and cloves. Make a few loaves and serve them at a holiday party or give them away as homemade gifts.

Keto Starbucks Gingerbread Loaf Recipe 

Here’s the list of the ingredients and steps that you’ll need to make this easy keto gingerbread loaf. Exact measurements and instructions are located in the printable recipe card at the bottom of this post.

Ingredients 

Keto Starbucks Gingerbread Loaf Ingredients

For the bread:

  • Almond flour
  • Large eggs
  • Heavy whipping cream
  • Melted butter
  • Baking powder
  • Vanilla
  • Cinnamon
  • Ground ginger
  • Swerve confectioners sugar substitute
  • Nutmeg
  • Ground cloves

For the icing:

  • Cream cheese softened
  • Swerve confectioners sugar substitute
  • Vanilla
  • Chopped walnuts
  • Almond milk as needed

Directions

Preheat the oven to 350 degrees, and grease a loaf pan well. Blend together the ingredients for the bread until smooth.

Spread the batter into the prepared loaf pan, and bake for 40-45 minutes until cooked through.

Let the loaf cool to room temperature.

Cream Cheese

Beat together the cream cheese, Swerve and vanilla in a mixing bowl. Add in a tablespoon or two of almond flour if needed until the icing is smooth, and to your desired consistency.

Spread the icing over the gingerbread loaf, and top with the walnuts before serving.

Gingerbread Loaf

  • 3 cups Almond Flour
  • 5 large Eggs
  • 1/4 cup Heavy Whipping Cream
  • 8 tbsp Melted Butter
  • 3 tsp Baking Powder
  • 1 tsp Vanilla
  • 2 tsp Cinnamon
  • 2 tsp Ground Ginger
  • 2/3 cup Swerve Confectioners Sugar Substitute

  • 1/2 tsp Ground Cloves

Cream Cheese Icing

  • 5 ounces Cream Cheese softened
  • 1 cup Swerve Confectioner's Sugar Substitute
  • 1 tsp Vanilla
  • 1/4 cup Chopped Walnuts
  • Almond Milk as needed
