This dinner makes five servings. That’s plenty for your dinner and weekly meal prep, or to feed your entire family. And there are just four grams net carbs in each serving.
You can minimize the carbs even more by using less veggies. Out of all of the vegetables in this recipe, the tomatoes have the most carbs.
Italian Chicken Skillet
What kind of chicken should you use when you cook in a skillet? I used boneless skinless chicken thighs because the dark meat stays the juiciest. It’s difficult to cook chicken breasts in a skillet and keep them from drying out.
But what really makes this dinner stand out is all the herbs and spices! In addition to the Italian seasoning, I used more garlic powder, onion powder, and thyme, oregano, and rosemary.
If you love the flavors of garlic and onion, be generous with the minced garlic and chopped onion too.
What To Eat With Chicken
An Italian chicken dinner is always bursting with incredible flavors, especially if you use fresh herbs. It doesn’t take much to make a complete meal with it, especially since it already has chicken and veggies.

Chicken Breast Cooking Tips
It’s extremely important to make sure that you make sure you that cook the chicken completely. Use an instant read food thermometer to get the most accurate information. You should cook chicken until it reaches 165F.
Chicken will cook faster when you slice it thinly. So use a sharp knife to cut the chicken into tiny bits. If you think the chicken is still too dry, I suggest marinating it first.
Use a keto-friendly marinade that is low in carbs.
How To Store Cooked Chicken
This is the perfect meal to add to your weekly meal prep! Store your cooked Italian chicken in an airtight food storage container and keep it in the refrigerator for up to three days.
You can also freeze it! Store the cooked chicken in a freezer-safe bag and keep it in the freezer for up to six months. Then, reheat the meal in a skillet again. You might need to add some butter.

Directions
Heat the olive oil in a large skillet over medium high heat. Add the thyme, oregano, rosemary, Italian seasoning, garlic powder and onion
powder to a small bowl, and stir to combine well.
Season the chicken with half of the seasoning mixture and salt and pepper to taste, and add it to the heated skillet.
Sear the chicken until cooked through, and remove from the skillet. Reduce the heat to medium, and add the onion and peppers to the skillet.
Saute for 3 minutes. Stir in the garlic, and saute for another minute. Mix in the zucchini, mushrooms and tomatoes, and saute until the vegetables have softened.
Sprinkle with the remaining seasoning mix, and add salt and pepper to taste. Return the chicken to the skillet, and toss to combine before serving.
