Satisfy your sweet tooth with a high-protein snack. These marinated berries are extra sweet and taste amazing with cottage cheese.
Marinated Berries
I’ve made marinated green beans and marinated mozzarella, but now it’s time for the sweetest version of them all – marinated berries! Four different types of fresh berries are marinated in lemon juice, sugar-free honey, and chopped fresh basil.
You could call them macerated, since that means to soften and sweeten. But no matter what you call them, they are delicious!
There is a lot of room for being creative in this simple snack. It’s the perfect thing to whip up when you want something sweet but also need some protein to go along with it.
Berries With Cottage Cheese
Have you discovered the joy of cottage cheese yet? It’s one of the most versatile low-carb foods you can eat. It tastes delicious with vegetables, as a hot pizza dip, or as a frozen dessert.
So it just makes sense to mix it with some berries and drizzle sugar-free honey on top. The result is a high-protein snack that tastes like an indulgent dessert.
Then, either mix the berries into the cottage cheese or serve them on the side, like I did. After adding the honey on top, it reminded me of yogurt!
In fact, if you aren’t a fan of cottage cheese, you can replace it with some sugar-free Greek yogurt.
Best Keto Berries
I used all of my favorite low-carb berries in this recipe. This recipe makes eight servings, and there are 6 grams net carbs in each serving.
If you want to cut the carb count down, then leave out the berries that have the highest amount of carbs.
Here’s a breakdown of how many carbs are in 100 grams of each of the berries that I used.
- Blueberries – 12 grams net carbs
- Strawberries – 6 grams net carbs
- Blackberries – 5 grams net carbs
- Raspberries – 5 grams net carbs
Keto Snacks
People disagree about whether to snack on the keto diet. But I think that as long as you stay active and eat within your carb limits, you can enjoy a snack when you’re feeling a bit hungry.
In fact, feeling hungry could lead to bad choices, so fuel your body with protein and fiber. Berries and cottage cheese is a really nutritious snack.
The antioxidants, vitamins, fiber, and minerals, all support a healthy immune system, and gut health, too. I also enjoy a veggie salad as a quick snack and some keto pickled deviled eggs definitely hit the spot and fill me up!
How To Store Berries
Before you store the berries, wash them. This will kill any mold spores, remove any bugs, and help the berries last longer.
Place all of your berries in a bowl with 3 cups of water and 2 tablespoons white vinegar. Then, rinse them off and place them in the refrigerator.
Line your container with paper towels. Then, put the berries in the container and cover it with a loose-fitting lid.
The key is to allow air to flow in and out of the container so that the berries don’t rot. You could also store them in containers that are made for berries.
If you keep them in the refrigerator this way, they should last about 4 days.
