What Is Scallopini
I took a classic Italian recipe and added a new twist to it. Traditional scallopini is made by dredging thinly-sliced chicken in flour and pan-fried in a lemon-butter sauce.
Instead of thinly-sliced chicken, I used Italian sausage. It was quicker and the Italian sausage has a lot more flavor.
Plus, I didn’t have to cover it in a breading or flour!
My scallopini simmers in a red wine sauce, so it’s a perfectly delicious twist on a classic dish.
Sausage and Peppers Skillet
This is the tastiest way to cook sausage and peppers! The flavorful bits of Italian sausage simmered in a tomato-wine sauce.
It brings out the sweetness in the red and green bell peppers. If you want it to taste slightly sweeter, use yellow and red bell peppers instead of green ones.
There are just six grams net carbs in each serving of this scrumptious scallopini. And this entire meal makes five servings – enough for your entire family or for meal prep later this week.
Keto-Friendly Sausage
The recipe card instructs you to slice the Italian sausage into thin pieces and then fry them. There are two types of Italian sausage that you can buy – packs of ground Italian sausage and thick sausages that look like bratwurst sausages.
If you want really thinly-sliced pieces, you might want to use links. You could even use kielbasa in this recipe, too!
30-Minute Keto Meal
One of the best things about this recipe is that you can have it on the table in just 30 minutes. It’s even faster if you prep all the vegetables ahead of time.
Then, all you have to do is cook the sausage and simmer everything in the skillet.
Either make this for dinner or spend just half an hour to make lunch or dinner for yourself for the entire week. If you’re going to meal prep with it, store it in an airtight container.
I suggest eating it within 3-4 days.
Keto Sides
Since this sausage and peppers dish is so full of flavor, I suggest making something with milder flavors that will let the sausage stand out. Make an easy keto broccoli salad – just be careful about the carbs.
Some keto dinner rolls and fluffy cauliflower mash will also taste perfect with the sausage and peppers skillet.

Ingredients
- Italian Sausage
- Olive Oil
- Onion
- Red and Green Bell Peppers
- Mushrooms
- Crushed Tomatoes
- Red or Marsala Cooking Wine
- Garlic
- Parmesan Cheese
- Italian Seasoning
- Swerve Confectioner’s Sugar Substitute
Directions
Heat the olive oil in a skillet over medium high heat. Add the sausage to the skillet, and saute until almost completely cooked through.
Add the sausage to the skillet, and saute until almost completely cooked through.
Mix the onions and peppers into the skillet, and saute until beginning to soften. Stir in the mushrooms, and saute until softened.
Drain the excess grease.
Add the garlic and Italian seasoning to the skillet, and saute for 30 seconds. Pour in the cooking wine, and simmer until almost completely absorbed.
Stir in the crushed tomatoes and parmesan cheese. Simmer for 5 minutes.
Season with salt and pepper to taste and mix in the Swerve if using before serving.
