All you need for a delicious egg salad is some diced tomatoes! This keto tomato egg salad has the perfect combination of textures.

If you haven’t tried to add some fresh chopped tomatoes to an egg salad, then let this be your sign to do it! The juicy tomato pieces will gently sweeten the salad, balancing out all of the savory and tangy flavors.

Keto Tomato Egg Salad

This is a perfect way to use vine-ripened tomatoes from your garden (or the farmer’s market). Even with the tomatoes, celery, and red onion, there is still just 3 grams net carbs in each serving.

This is the perfect salad to make when you need more protein and fiber and you aren’t in the mood to really cook. The easy egg salad is ready in 15 minutes! (Especially if you hard boil the eggs ahead of time). 

Egg Salad With Celery 

Are you a texture person when it comes to food? If you prefer crispy or crunchy foods, then you’ll love this egg salad.

Diced Celery

Unlike classic egg salads that are creamy, this one has diced celery and red onion. Both types of vegetables add some crunchy textures that you will absolutely love! 

There are a few different ingredients that you can substitute, too. If you don’t like celery, then leave it out!

If you don’t like how powerful the red onion is, rinse it under cold water or use either white or yellow onion. And if you want the egg salad to have more heat, then add some diced jalapenos! 

Egg and Cheese Salad 

The shredded cheese is one of the best ingredients in this recipe. It makes the mixture taste even richer and creamier.

Don’t forget to save some extra to spread on top as the garnish. Take my word for it: shred your cheese at home.

If you have the time, it makes a huge difference. The flavors stand out so much more because the cheese isn’t covered in anti-caking agents. 

What To Eat With Egg Salad 

The tomato and egg salad will taste perfect with a bowl of low-carb Shepherd’s pie soup. Or for something even lighter, make keto turmeric zucchini soup.

I love a soup and salad lunch. If you have some leftover keto green bean casserole bundles, heat them up!

They taste amazing with the egg salad or munch on some keto copycat Olive Garden Breadsticks with the creamy egg salad. 

How To Store Egg Salad 

You can save yourself a lot of time by hard boiling all of your eggs ahead of time. Store hardboiled eggs in an airtight food storage container in the refrigerator for up to a week.

Then, after you make the salad, store it in an airtight container in the refrigerator for up to three days. It will taste better if you eat it sooner.

As it sits in the refrigerator, the red onion will start to overpower all the other ingredients. 

Do not freeze this salad. It will change the texture and – trust me – it won’t be as appetizing. It tastes so much better when you serve it fresh.

Ingredients 

  • Shredded Cheddar Cheese 
  • Hardboiled Eggs
  • Red Onion 
  • Chopped Celery 
  • Mayonnaise 
  • Dijon Mustard 
  • Garlic Powder 
  • Roma Tomato

Directions

Diced Red Onion

Place the eggs, red onion, celery, mayonnaise, dijon, garlic powder, tomatoes and salt and pepper to taste into a mixing bowl.
